  • Slow Cooked Chicken and Sausage Stew (9 Points)

    1-1/2 cup serving 4 (1 ? cup servings)
    ? lb. Kielbasa sausage, cut into ? inch slices (I used the low fat stuff)
    2 boneless, skinless chicken breast halves, cut into bite size strips (I use 1 LB)
    ? cup thinly sliced carrot
    1 small onion, thinly sliced, separated into rings
    1 (16 oz) can baked beans, undrained
    2 tbs. brown sugar
    1 tsp. dry mustard
    ? cup ketchup
    1 tbs. vinegar
    2 cups frozen cut green beans thawed

    In 3 ? to 4 quart Crock Pot, combine all ingredients except green beans. Cover, cook on low setting 6 to 8 hours or until chicken is no longer pink. Ten minutes before serving, stir in green beans. Increase to high heat setting; cover and cook an additional 10 minutes or until green beans are crisp tender.

  • I'm keeping my fingers crossed that Santa buys me a crockpot this year. I've never owned/used one before. :( 
  • I've never used one either-- but it's because I can't leave the house with it on. My mother raised me to be paranoid about fires... it's horrible and I can't get past that concept! I really want on to make pulled chicken Sad
  • I've currently got a crockpot oatmeal going for tomorrow's staff breakfast.  I've never made it before so I'll let you know how it goes.  It uses steel cut oats instead of instant or old-fashioned.   My standby favorite is chicken (either a whole chicken or whatever part you like - drumsticks, thighs, bone-in breasts, or boneless breast - although you'd reduce the cooking time for those), potatoes, baby carrots and a bottle of Catalina (and you could use FF french dressing or something similar).   So easy, simple, tasty.   The other new favorite is crockpot fajitas - chicken, red and green peppers, onions, a packet of fajita seasoning or your own preferred seasonings and a some water.   Much easier than doing it bit by bit in a skillet.

    Ahhh, the secret sauce was catalina!  I could not figure it out.  Explains why I liked it so much - I was obsessed with catalina when I was little to the point where I would demand to just eat it alone; my mom finally caved and let me eat with spoon  once :)  Annie made me that one last week and it was soooo good!

  •  My whole thing with the crockpot is that if I'm going to take advantage of it, the recipe needs to call for just throwing things in, so I feel like I'm getting a cooking break.  ;-)

    I like to make steel cut oatmeal in my mini crockpot (I make a small recipe so it would burn too much in the big one).  I use 1 cup steel oats, 3 cups of water and 1.5 cups of milk.  So yummy and easy!

     I also like to make salsa chicken.  I just throw in some chicken breasts and a jar of salsa.

  • 3 chicken breasts

    1 can black beans

    1 can corn (or frozen corn)

    1 jar salsa

    (I also add a chopped onion, because we like onions)

    Put chicken on the bottom, dump everything else on top. Cook on low 8 hours or so.

    Shred with forks when it's done cooking.

    We use this as a filling for burritos. I cook it all day, then when I get home, I make some fresh guacamole, and some Mexican rice.  Then we make burritos with tortillas, the guac, fat free sour cream, 2% milk cheese, rice and the chicken mix.

    H is notoriously picky and he loves this. It makes a TON of food. And it doesn't taste like salsa dumped over chicken. The idea of chicken tasting like salsa was not appealing to me - but the flavors of this come together so much better. It's an awesome burrito or taco filling.

    Also, it makes a TON of food. we can eat it for two days after!
