::Sarah:: Crab soup recipe

Here's my cream of crab soup recipe.  It's super easy and yummy.  You can omit the sherry if you don't like it (I <3 sherry).

  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon minced onion
  • 1 tablespoon lemon juice
  • 1/2 pound crabmeat, backfin 
  • 16 ounces light cream (half and half or milk will work too)
  • Parsley
  1. In a saucepan over medium heat melt the butter, add Old Bay, minced onion, lemon juice, and stir thoroughly.
  2. Add the flour, stirring constantly, and then gradually add the cream, continuing to stir.
  3. Add the crabmeat and let simmer for about 15 minutes (don't let boil)
  4. I like to add a little sherry at the end but that's optional.
  5. Top with a little old bay and parsley.
