Need ideas for "stuffed" sides

So the theme for the family dinner on Christmas Eve is "stuffed foods" (Huh? not my first choice, but whatever).  My sister is making the main dish (some sort of stuffed meat, i.e. stuffed pork chops, chicken cordon bleu, etc..) and I need to bring a couple of sides in the theme. Any suggestions that don't fall too closely to the "appetizer" side of a menu (like deviled eggs, pigs in a blanket, etc). TIA!

  • If you want to interpret "stuffed" differently, my mom makes a really good broccoli corn casserole that has stuffing mix in it and as the topping.

  • Thanks for all the great ideas!  It looks like my sister has decided to do the whole thing herself this year, so I probably won't be doing anything afterall. I'm slightly peeved, but I guess that means fewer things for me to worry about!

  • I found this stuffed mushroom recipe for a work party, and used it for another Christmas party recently. It's super easy...and super tasty!

     

     STUFFED MUSHROOMS

     

    Ingredients

    ?              12 whole fresh mushrooms

    ?                1 tablespoon vegetable oil

    ?                1 tablespoon minced garlic

    ?                1 (8 ounce) package cream cheese, softened

    ?                 1/4 cup grated Parmesan cheese

    ?                 1/4 teaspoon ground black pepper

    ?                 1/4 teaspoon onion powder

    ?                 1/4 teaspoon ground cayenne pepper

    Directions

    1.    Preheat oven to 350 degrees F (175 degrees C). Spray a bakingsheet with cooking spray. Clean mushrooms with a damp paper towel. Carefullybreak off stems. Chop stems extremely fine, discarding tough end of stems.

    2.    Heat oil in a large skillet over medium heat. Add garlic andchopped mushroom stems to the skillet. Fry until any moisture has disappeared,taking care not to burn garlic. Set aside to cool.

    3.    When garlic and mushroom mixture is no longer hot, stir in creamcheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixtureshould be very thick. Using a little spoon, fill each mushroom cap with agenerous amount of stuffing. Arrange the mushroom caps on prepared cookiesheet.

    4.    Bake for 20 minutes in the preheated oven, or until themushrooms are piping hot and liquid starts to form under caps.
