white chicken chili recipe?

anyone have a good one to share?  we are having a chili cook-off instead of your traditional Christmas dinner :)

also, what do you like to eat with your chili?  planning on sour cream, shredded cheese, crackers and corn bread.

  • It not my recipe, but I just get the little packet in the spice isle, where the other packets are. I can't remember who makes it, but at Kroger by our house, its on the ver top shelf and it a black packet.

    It's super good and of course, I tweek it a little.

    I love corn bread with my chili.

  • Don't have a good recipe, but lots of cheese is always a must, and I often enjoy putting in either fritos or oyster crackers too. :)

  • Oh, good call Merin. Frito Scoops with Chili is awesome!
  • I always just make it myself but I don't have a set recipe with amounts...  It usually includes:

    -olive oil (for cooking down the veggies first)
    -1 green pepper
    -1 little can of green chilies
    -2-3 cloves of garlic
    -1/2-3/4 of a yellow onion
    -a few cans of cream of chicken soup (or one of those huge cans)
    -a can or two of chicken broth (that I usually mix w/ corn starch to thicken the chili)
    -a few cups of cooked shredded chicken
    -2-3 cans of white northern beans
    -a few sprinkles of cayenne pepper
    -cumin
    -chili powder
    -white pepper
    -salt

    I let it simmer for a while and tweek it as necessary.  I usually serve it with broken tortilla chips, monterrey jack or colby jack cheese and sometimes sour cream.
