Breakfast recipes

Hey ladies!

Just looking for some good breakfast recipes for Christmas morning.  Last year I made Eggs Benedict Casserole http://www.food.com/recipe/eggs-benedict-casserole-121583 and Creme Bruele French Toast from Pam's site.  The french toast was good, just a little too sweet for us. And I normally love the Egg Benedict Casserole, but (I know this sounds strange) I can't make it for sentimental reasons.  So, does anyone have any tried and true recipes to share with me?  Preferably something casserole style, that can be cooking while we open gifts?

    i'm making Chocolate Chip Crumb Cake for christmas morning. you could make it early this week, wrap it tightly in foil and freeze it. i plan to do mine on christmas eve but freeze half for new year's weekend since it's just the two of us.

  • My inlaws just made this for me for my brunch this weekend!  We are making it for Christmas morning but using thicker slices of bread.  It was really good  - which surprised me because I don't like french toast.  Even better, it gets made the night before and just popped in the oven.

    Stuffed French Toast

     

    If we don't do that, though, I want to make this instead:

    Baked French Toast with blueberries

  • we LOVE this and I'm making a double batch of it for Christmas Day breakfast at my parents' house:

    BreakfastBlintz Souffle

    Batter:
    1/2cup (1 stick) butter, softened
    1/3 cup sugar
    6 eggs
    1 1/2cups sour cream
    1/2 cup orange juice
    1 cup flour
    2tsp baking powder

    Filling:
    1package (8 ounces) cream cheese, softened
    1 carton (16 ounces)small-curd cottage cheese
    2 egg yolks
    1 T sugar
    1 tspvanilla extract

    Spray13x9 inch baking dish with nonstick cooking spray. 

    Tomake batter, in a large bowl with an electric mixer or in a blendercombine butter, sugar, eggs, sour cream, orange juice, flour, andbaking powder; mix only until ingredients are combined. 

    Filling: combine all ingredients and mix well.

    Pour half the batter into the dish. Drop the filling in by the spoonful over the batter, spreading out as much as possible but don't stir them together.

    Pour remaining batter over the top.

    Refrigerate overnight. Bring pan to room temperature. Bake at 350 for about an hour - until golden brown and puffy (it will deflate once you take it out and it cools for a few minutes).

    I serve it with homemade blueberry syrup.  YUM. And so nice b/c you can prep it the night before and just have to throw it in the oven while presents are being unwrapped ;-)
