need appetizer ideas

For Christmas Eve my family usually just has a bunch of appetizers and snacky foods instead of a full meal. And we play games. I need some ideas for more appetizers, maybe something involving a vegetable. DH has nixed veggie pizza. Just some notes: we are not an artichoke or mushroom family. I am doing my final (and 3rd) grocery shopping trip tomorrow afternoon. Thanks ladies!

So far we are having:

meatballs

little smokies

shrimp (mostly for DH)

chips and salsa

crackers and dips

summer sausage and cheese with crackers

hoards of cookies and sweets

  • My boss always makes a spinach dip served with beer bread and it's a HUGE hit at our office goodie days. I'm pretty sure the spinach dip is the one made from a packet...if that helps?

    Buffalo chicken dip

    Sliders

Pizza dip (not sure of the recipe, but I know it has cream cheese and pizza seasoning in it)

Sorry, none of that has veggies in it (other than the spinach dip....)

  • Ooh, I just found these cheese and broccoli quiches. Mmmm.
  • Baked Brie is always a hit.

Get some puff pastry, roll it out, spread raspberry jam, then place slices of the brie over the jam, spread jam again on top of the brie, cover w/ another piece of puff pastry, and pinch the edges together (you can use a fork to make it look pretty)  and bake at 375 for about 25-30 minutes

  • My standard "go to" appetizer is cream cheese and salsa pinwheel wraps. Sooooo yummy! I vary it from time to time, but here's how I made it yesterday for my work potluck appy party!

    Filling:
1 container of spreadable cream cheese
about 1/4-1/2 cup of salsa (depends on how much salsa you like!)
    1-2 finely chopped green onion
    1-2 chopped dill pickles (optional)
    pinch of garlic powder
    salt & pepper

Put all ingredients in a food processor and whiz them up for about a minute.

Spread mixture on a flour tortilla (for Christmas I like using a tomato basil one that's red and a spinach one that's green!)

Roll up from one side to make a pinwheel tube.

Wrap in plastic wrap and refrigerate for at least an hour.

Cut in to slices for serving, discarding the ends (which don't get much spread)
