Normally on Christmas Eve my mom's side all gtg and we have apps and snack foods. Well since this is our first Christmas w/o grandma, we are doing things differently.
My mom is hosting a nice sit down dinner. We wil have ham, GBC, Cheesy potatoes...the whole nine.
Well tomorrow, I am hositng the ILs and some family friends and I know SIL is bringing cheesy potatoes.
Fast Forward to Christmas day, I am having Christmas dinner with Honey Baked Ham. I don't want cheesy potatoes b/c I will have had them two time by then. I really cant do GBC, b/c I will have had it the night before. I thought about augratin potatoes, but my MIL doesnt like cheese...WTF doesnt like cheese?
I could do mashed, be eh....
OMG, why is this so difficult. I just think I have too much other stuff swirling around in my brain.

You could do easy twice baked potatoes. I use redskinned (I think they taste better) and bake them for about an hour at 400 or 375. Once they are soft, take them out and let cool. Once cool, cut in half, scoop out the insides, mix sour cream (fat free) bacon bits (can skip) and cheese and mash. You can fill your MIL's potatoes before you put in the cheese. Since they are small figure 2 more more per person. They come out great and a really good with ham. Some times I sprinkle a bit of brown suger in them and mix.
Bake again until hot. So good!
Mix everything up before you refill the pototoes. And I don't use a ton of cheese (I don't like it either, but I love this dish!) Chedder cheese is best.
Corn casserole? Broccoli? Glazed carrots?
Or if you really want to do a potato dish, what about a jazzed up mashed potato? Like smashed redskins w/ garlic and parm or something?

My SIL makes something similar to this every year. Not sure if this is the recipe she uses every year or not, but it is a hit. I think it goes well with ham too.
