I need beef recipes

Apparently DH is "chickened out" (what can I say? I like chicken Smile) so I need some ideas! About the only things I make with beef are tacos/burritos, meatloaf, hamburgers, and beef fajitas. He can't do tomato sauce so stuff like spaghetti is out. I'll go through my recipe books tomorrow, but I'm feeling clueless since chicken is my go to--any ideas/recipes? TIA Smile

  • We don't eat beef too often either...but one thing I used to make that D loved was just a taco layered casserole. It is my own spin on a traditional casserole. I took like a 9in pie plate and sprayed it with Pam. Layer in a flour tortilla with some refried beans (or whatever you like) spread on to it, then hamburger meat, queso (velvetta and rotel), and shredded cheese. Layer that up 3 to 4 times and end with a tortilla on top with any left over queso and/or shredded cheese and bake like 20 minutes or just until the top tortilla is starting to brown.

    I usually serve it up like a pie slice with some salad mex corn and occasionally rice.

  • I'm a total chicken eater too! I bet you couldn't find any beef in my house (wow- that's the first time I even realized that. But it's probably true). I was going to tell you to look at allrecipes dot com. I think the website is a great resource. If he's craving some beef, you could always dish him up some sheppards pie. :) Haha it's so easy and my household loves it after a long day. Brown meat, cook mashed potatoes, put them in a caserole dish (meat on bottom), top with shredded cheese, at like 400 just to warm then and voila! I always spice it up with onions, peppers, and maybe corn. Super easy and I think it's a good dish for not "big beef eaters". Not the most sophisticated of meals.. but it's comfort food. Who wouldn't love it?! Haha

  • Get a can of pizza dough, roll it out. Brown ground beef and onion, after it has browner add half block of velveeta, about five slices of crumbled bacon and a cup or so of ranch. Spread all over pizza dough, roll it up and bake at 400 for however long it takes to brown. So good! Slice the top of the roll a little too so it's pretty. I always serve it with ranch to dip it in.

  • We love Beef Tips and Noodles.

    Pressure cook beef tips. Boil about 1/2 - 3/4 bag of egg noodles.  Once meat and noodles are cooked mix them together along with two cans of Campbell's Beefy Mushroom soup and about 1/2 cup of the beef broth from the cooked beef tips.

    Other ideas:  beef stroganoff, chicken fried steak, beef tenderloin.

  • Thanks for the suggestions so far, ladies!! All of these are things I think he would like and they sound easy :) I'll definitely check out allrecipes tomorrow.
  • I don't cook with alot of beef either. Since it's cold out beef stew is pretty easy to make.

    I usually make mine in the crockpot. Stew pieces, carrots, potatoes, and a packet of the slow cooker stew mix. Cook on low for 6 to 8 hours or high for 3 to 4. I usually serve it with cornbread.

    I've also made this before and it turns out so good!

    This easy skillet beef and noodle recipe makes a tasty family meal.
     
    Beef and Mushrooms With Sour Cream Sauce

    Ingredients:

    • 1 tablespoons olive oil
    • 1 1/2 pounds sirloin, cut into thin strips
    • 1/2 cup flour
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 6 to 8 ounces sliced mushrooms
    • 1 medium onion, halved, sliced thinly
    • 1 can (10 1/2 ounces) condensed beef broth
    • 1/2 cup dry red wine, such as pinot noir or Burgundy
    • 8 ounces noodles
    • freshly chopped parsley
    • 1 cup sour cream blended with 2 tablespoons flour

    Preparation:

    Heat olive oil in a large saucepan or Dutch oven over medium-high heat. Toss beef with flour and salt and pepper in a food storage bag; take beef out and put in the hot oil. Stir, cooking until lightly browned. Add sliced onion and mushrooms. Reduce heat to medium. Cook, stirring, for about 5 minutes.

    Add the beef broth and wine. Cover and simmer for about 1 hour, or until beef is tender. Meanwhile, cook noodles, following package directions. Drain and keep warm.

    To the beef mixture add sour cream and flour mixture; stir, cooking, until hot. Add noodles and heat through.
    Serves 4 to 6.

  • I also found this crockpot recipe for easy Beef Stroganoff. I think I might even try it.

    Cook Time: 9 hours

    Total Time: 9 hours

    Ingredients:

    • 1 pound stew meat cut into 2" pieces
    • 1 can (10 3/4 oz.) condensed beef broth
    • 1 medium onion, coarsely chopped
    • 1/2 teaspoon garlic powder
    • 1 can (4 oz.) mushroom pieces, drained
    • 2 tablespoons cornstarch
    • 3 tablespoons cold water
    • 1 can cream of mushroom soup
    • 1 cup sour cream
    • 1 tablespoon paprika
    • hot cooked noodles

    Preparation:

    Place beef, onion, beef broth, garlic powder and mushrooms into crockpot. Cover and cook on low heat setting for 8 to 10 hours. Turn crockpot to HIGH setting. Heat until bubbling. Stir in soup, sour cream, and paprika, blending until smooth.Blend cornstarch in cold water; stir into slow cooker. Cover and cook 15 minutes longer. Serve with hot cooked noodles.

  • I love doing beef pot roast because it's really good and so easy. Basically, go buy a roast (eye of round roasts are very cheap with very little fat, but they don't have a TON of flavor. I generally prefer rump roasts though... a little more fat, but still manageable, with more flavor) that is around 1-2 pounds for the two of you. Season it however you want (I use Penzey's Chicago Steak Seasoning, but even good old salt and pepper will do). Toss it in the crock pot, add some water, and let it go all day!

    When you're close to wanting to eat, drain the water and put in a saucepan, and add more water if you want. Add a few beef bullion cubes, and boil. Meanwhile, melt butter (if you want to do it "traditionally," melt 1/4 stick for every 1 cup of water in the pan, but I think you can go a little less). Mix the melted butter with several tablespoons of flour until it's kind of gummy, and then pour into the water. Whisk, let it sit for five minutes, season if necessary, and voila! Delicious gravy.

    I think it goes without saying this gets served with mashed potatoes. And there are always leftovers for the next day's lunch or dinner. This is one of DH's favorite meals.

  • I need to make roast, I haven't made one in a while. In recipes that call for cream of mushroom, is there anything I can substitute? I just can't handle cream of mushroom soup and that's why I haven't made several recipes I have in my cookbooks.
  • I make a thing like shepard's pie. Brown ground beef, add green beans (this is the only thing I like canned green beans for), tomato soup, water. Top with mashed potatoes with cheese and fried onions.

    I don't eat much beef. I can't tell you the last time I bought beef.

  • Alright ladies, tonight is meatloaf and tomorrow will be another beef dish (possibly stroganoff or BoyMom's recipe). Thanks so much for the suggestions, I'm feeling a little less lost in the beef department Stick out tongue.
  • Drip Beef Sandwiches

    (Boymom's H can vouch for these... haha)

    Ingredients:

    3-4 lbs chuck roast

    tsp garlic powder

    1/2 tsp oregano

    1/4 tsp rosemary

    3/4 tsp lawry's seasoning salt

    2 beef bouillion cubes

    1/2 cup water

    **Throw it all in a crock pot and cook on high for 5-6 hours or on low for 7.  When cooked through, remove fat, shred and return to crock pot.  Serve on hoagie rolls or slider buns.  

    Easy and DELISH.  :)
