I love cheese

I really didn't want a red sauce with pasta tonight and found this cheese sauce on line.  I've died and gone to heaven.  Easy, tasty, easy yuuumy. I'm sure you fancy shmancy cooks have a dynomite one too.  If you have one, share!

 

Cook Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black or white pepper
  • 1 1/2 cups milk
  • 1 cup grated sharp Cheddar or smoky flavor Cheddar cheese

Preparation:

Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese. Stir until smooth and well blended. Serve with pasta or vegetables.
Makes 2 cups.

  • That's pretty much what I do for a cheese sauce too, although I usually match my butter/flour/milk amounts so I do 3 tablespoons flour, 3 tablespoons butter, 3 cups of milk and then between 2-3 cups of cheese.  Sometimes I sub 1 cup of milk for 1 cup of chicken broth to make it a little lighter.  I also like to add dijon mustard and sometimes a little cayenne, nutmeg, or paprika.
