Ok, my MIL's family is doing Christmas at our house in Friday.  There will be about 15 people.  FIL is cooking fajita's.  So, outside of all the fixings for fajita's, what should I make?

I've got dessert covered.  It has nothing to do with Mexican and everything to do with Christmas but I don't care. 

I think I will do Queso since I have everything for that already and it's a good appetizer.  Rice and beans are a must.  I feel like I should have some other awesome stuff.

Oh, anyone have an awesome guacamole recipe?  I use one from one of my cookbooks and it's ok but I want something better.  I have one of those stone things you make it in that I'm dying to use, LOL!

  • Guacamole- 

    2 campari tomatoes (or 1 small tomato)

    2 Avocados

    1 small yellow onion

    1 tsp minced garlic

    2 tsp lemon juice (or to taste)

    dash of cayenne pepper

    ETA: kosher salt you'll want to add this to taste

    pulse all ingredients in food processor, chill for 2 hours.

    It's definitely basic, but I like it!

    Yes, of course you can come :)  This reminds me, I need to invest in a food processor.  We just have a magic bullet and a blender.  I think this is basically my recipe so, if it is, I'll just go with it.

  • For guacamole, I don't have amounts, but I smash up avocados with a fork, then stir in some salsa, chili powder, garlic powder, cumin, and a little lime juice.
