I love a good snowstorm!

We have 20+ inches so far and it just started snowing hard again (right after we finished shoveling/snow-blowing/cleaning off cars).  Ed took an extra day off (because driving an hour to work this morning would not have been okay)  I made some chili for lunch, and am going to brave the roads to grocery shop in a little bit and make some corn chowder and ham and cheese paninis for dinner.  Other than that we are settling in to watch the snow, read, and relax!

How was everyone's Christmas/weekend?  How is the snow where you are?

Re: I love a good snowstorm!

  • I can't believe that the storm has missed us completely in Toronto... it's so bizarre to hear about everyone else's crazy snow, and to look outside and see.... nothing. I mean, there's a tiny bit of snow leftover from a few weeks ago and that's it.

It's for the best because I have a busy week and being snowed in would not be good for me!

  • PSSHHHHH. we were supposed to get a "blizzard" and ended up with only a few inches. I was so pissed when I realized I had to come to work this morning.

  • Mandee: I was thinking about you because my little sister flew out to DC yesterday to visit her bf and I was hoping she made it safely.

This is sort of what I had been expecting...so often there is such hype about a blizzard and we end up getting 6-8 inches, which here is nothing.  So wasn't I surprised when DH woke up this morning to go to work, looked outside, saw 14 inches of snow, and crawled back into bed Smile

  • We are supposed to have 6-12 inches by Wednesday morning, but nothing yet. Winter storm watches are everywhere. I'm jealous for people getting crazy storms!!

  • We had a white Christmas here in Georgia. The first in Atlanta since 1882. My Dh has never had one. :D

But I have to know can you share your corn chowder recipe. I would love to know how to make it. It's one of my favorite things to eat.

  • I actually don't really use a recipe...but here is my plan.

I am going to cook up some bacon, then add some onion into the bacon fat until it is translucent.  Then I will add in a little flour to soak up the grease and throw in the leftover mashed potatoes from Christmas dinner (1/2 cup or so).  Then I will add in 3-4 cups of chicken stock and frozen corn and some diced potatoes and heat until simmering and the potatoes are soft.  I will take out about a cup and a half of the soup and blend it in the blender, then put it back in the soup (just to thicken it up).  Then I'll add some fat free half and half and the bacon pieces crumbled up, and salt and pepper to taste.

  • That soup sounds amazing, sans corn. There's something about corn in soup that skeeves me out. I might put more potatoes on my list so I can make some this weekend.

We were supposed to see almost 14 inches, but I think we maybe got 4. Go figure. Our weathermen are never anywhere near close to right. It might have something to do with the mountains surrounding us, but oh well. I guess it was less for DH to shovel and such this morning.

  • In the Philly area we received about 13 inches. I was all pumped to get some things done around the house. Instead all I have done was stuff my face.
  • Oh and I feel partially guilty having DH shovel everything. I suppose that is his job, haha.
