Hi ladies! I need your help today.
A couple at my church just had a baby, and I am scheduled to bring them dinner tonight. I asked the wife if the family had any allergies, and she said no, but her husband doesn't like and won't eat any fruits or vegetables.
What on earth do you serve to to someone who hates ALL fruits and vegetables?! They've got an almost 2-year old - that girl's gotta get some nutrients in there somehow!
I came up with the grand idea of a taco night. That way, those who don't mind veggies can have them, and the husband can avoid them and do his meat and cheese stuff.
So far, I'm thinking:
-Hard and soft shells
-Taco Meat
-Chopped onions, lettuce, tomatoes
-Shredded cheese
-Sour Cream
-Refried Beans
-Rice
-Taquitos
Any other ideas on what I could serve instead/in addition to that?
And any tips on how to transport it and keep it warm for the 45-minute drive?

What about salsa and black beans? You could also do a corn salsa, but if the husband doesn't like veggies that might not fly. I was going to suggest maybe onions and peppers sauteed as well(a play on fajitas).... The not liking veggies makes it kinda difficult. What about a quesadilla?
Most of the stuff you have listed is stuff I would serve with tacos (yum by the way!) and easy enough to pop in the microwave if needed but if you have a cooler bag it might work to put the warm stuff in containers into a bag like that and it should keep it fairly warm . I think this is a great idea and you have quite a few options there for the veggie lover and the not so veggie lover.
I think tacos might be on our menu this week now!
I didn't see taco sauce on your list... Also, Jason and I like to put Howard's hot or sweet pepper relish on tacos...it's SO good! Here's a pic:

As for keeping it warm, I know they make hot/cold bags...I got one at Stew Leonard's (which I think is a tri-state east coast chain?) last year for like $3. But I'm guessing other people make them...wonder if Target/Walmart would have something like that?

The only things you need to keep warm is the peppers/onions, the meat and the beans. The soft shells, you can wrap in a damp paper towel and toss in the microwave for 30 seconds to warm up. As to keep them warm, take a clean sock, and fill it with dry rice. Pop in the microwave for 5 min, then put it with the hot food in a cooler or like a padded lunch box. The rice holds the heat for about 2-3 hours. I use this (at a less time) as a heat pad sometimes. Cheap and easy.

My southern California self adds "guacamole" to taco fixings - it's just what we do as a people.
I think you'd be okay with reheating stuff when you get there - it's almost impossible to keep things piping-hot after 45 minutes of driving!
My best friend's kids don't like veggies (although they're 4 and 5, so more understandable) - last night when I went to their taco night the boy had nachos (chips, taco meat, cheese, then microwave the plate for 60 seconds or until the cheese melts; beans could be added to this if the hubby likes beans); the girl had a quesadilla with the same ingredients, just using a large flour tortilla. Oh, and add sour cream.
I think it sounds delicious...I may need to change our planned enchilada dinner for Friday to tacos.
Like pp's suggested, I would add black beans (which as yummy and a great source of protien) and also gaucamole. My DH doesn't eat any veggies but loves gauc, so it's worth a shot.
Also, avacados are on sale at Jewel for $0.99 this week! I picked up a few last night for Friday :O)

For sure. I LOVE guac. Or even just sliced avocado on tacos. But that might really freak out the husband, lol. I don't even know how available avocados are in the rest of the country.

I have to second (third?) GUACAMOLE jacki!!! That is always the first thing I make for our taco nights, although like Meredith said, are they available near you?? We usually have them all the time here, but they get super cheap when they are really ripe (I hate waiting for them to ripen at home so I always buy super soft ones).
Spanish rice by Rice a Roni or the lipton packet is really good. I love that with tacos!
