Chili Recipe, Anyone?!?

Come on, I need something good! One of you amazing cooks have to give it up. Cincinnati girls?!?

  • I have one but it's pretty simple.  Not much to it.  Don' t know what kind your looking for, but here ya go :)

     

    2 cans of red chili beans

    1 lb of ground beef

    2 cans of diced tomatos

    2 cans tomato sauce

    Chili powder to taste (maybe 2 tablespoons)

    Salt and pepper to taste

    Optional add-ins sometimes I use are: Ketchup, Worshestershire sauce, V8 juice, brown sugar, dark chocolate (Just add to taste, they are fun add- ins that can change up the flavor a bit)

     

    Brown the beef then add in the other ingredients.  You can cook it on the stovetop for an hour or so or cook in a crockpot all day on low.

  • Chili
     
    2 pounds ground meat (chuck, turkey, etc.)
    1 pound Sausage, removed from casing (turkey, pork, etc. - I use "spicy Italian" varieties)
    3 cans chili beans, drained
    1 can "hot" chili beans
    2 cans diced tomatoes, in juice
    1 can tomato paste
    1 medium onion, chopped
    3 celery stalks, chopped
    1 green bell pepper, chopped
    1 red bell pepper, chopped
    2 chili peppers, seeded and chopped (use whatever peppers suit your taste - jalapenos, ancho, poblano, etc.)
    1 Tbsp. crumbled bacon (I just use bacon bits)
    4 beef bouillon cubes
    1/2 cup light beer
    1/4 cup chili powder
    1 Tbsp. Worstershire
    1 Tbsp. minced garlic
    1 Tbsp. oregano
    2 tsp. cumin
    2 tsp. Tabasco
    1 tsp. basil
    1 tsp. salt
    1 tsp. pepper
    1 tsp. cayenne pepper
    1 tsp. paprika
    1 tsp. sugar
    Fritos (garnish)
    Cheddar Cheese (garnish)
     
    Crumble ground meat and sausage in a large pot and cook until browned. Drain excess grease. Pour in chili beans (regular and hot), tomatoes and tomato paste. Stir well. Add onion, celery, red and green bell pepper, chili peppers, bacon, bouillon and beer. Add spices, stir to blend. Cover and cook over low heat at a simmer for 2 hours. The longer it cooks, the more the flavors blend and give it a really good taste. Taste after 2 hours and adjust as needed - if it's too spicy, add some sugar (or even some cocoa/chocolate chips if you have any on hand - sounds odd, but it works). If it's not spicy enough, obviously add more Tabasco or cayenne.
     
    Serve topped with cheddar cheese and crumbled Fritos.
  • I have a chili recipe I wanted to share with you, but it's my Grandpa's recipe and I couldn't find it anywhere in my recipes at home :( It's an all-meat chili. My g-pa would scoff at the thought of beans in chili, he called that "stew". LOL. Anyways, I could ask my mom if she can email the recipe to me, but I have no idea if she can get it to me in time.

    3 lbs  lean ground beef
    1/4 lbs  beef suet (optional)
    1 jar 3oz Gebherdt chili power (or to taste)
    2 6oz cans tomato paste
    1 can stewed italian tomatoes
    2 cans beef broth
    salt & pepper to taste
    6-8 gloves garlic (or to taste)

    Melt suet in dutch oven, remove any suet not melted.Brown meat add 1 tbs flour. In a blender add the beef broth,tomato paste,stewed Italian tomatoes,garlic blend until mixed,pour in dutch oven with meat, add 1/2 to 1 blender full water (depending on how thick or thin you like the chili). Mix well, bring to a boil and then simmer for most of the day.

    Add cumin if needed to taste.

     

    This chili can require lots of salt, so don't be shy. We also add some cider vinegar, I would say 1/4 cups worth, depending on how it tastes to you- don't add the whole 1/4 cup at once. I would also highly recommend the suet, unless you can find very fatty ground beef.

    We also use about 1 tsp. (or to taste) cayenne pepper.

     

  • Thanks ladies! All beef chili is right up my alley because I don't eat beans. I always make chili with them and then spend a ridiculous amount of time picking them out. I have to admit, I have no idea what suet is.

    Google it, then buy it & forget about it. 

    If your grocery stores are anything like ours, you may have to find a real butcher shop to get suet. The butcher shop I go to just gives it to me for free, after he's done looking at me like I'm crazy & couldn't possibly know what I'm asking for.
