I need new recipes, but I'm a moderately picky eater, yet still trying to lose weight. Tonight's dinner is baked chicken fingers and asparagus. What's for dinner in your house?

I'm no help because we're going on a date out to dinner! But last night I made chicken stroganoff in the slow cooker... delicious! It's the second time I've made it. You couldn't make it tonight because you need to let it cook 5-6 hours, but is is very delicious, hearty, and best of all, EASY. I'm slightly obsessed with my slow cooker these days.

If you look through the crockpot section of the cookbook, I've also made the Salsa Chicken, and it was also very good.
I've also made the butternut squash macaroni and cheese which is somewhere in the cookbook- delicious but I altered the recipe some.
Chicken in White Wine...super good but not the best calorie wise haha but its SO worth it! lol
Put chicken breasts in a casserole pan and put on 2 slices of swiss cheese per chicken breast. Then mix 1 can cream of chicken soup, and 1/4 cup white wine sauce then pour over chicken breasts. Top with 2 cups herb seasoned stuffing and pour 1 stick of melted butter over top.
Bake at 350 for 45 minutes.
Its SOOOOO good!
I've had that chicken with white wine! It is delicious, but I can only imagine the calories.
DH and I love to roast shrimp and broccoli in the oven with Cajun seasoning and lemon juice and serve it over brown rice. Just roast the chopped broccoli for 10 minutes at around 425, then add the shrimp and roast until their pink (about 5-10 more minutes).
YUM! And not so bad for you. Shrimp just has too much cholesterol...but it's low in fat and calories.

I love allrecipes.com because it tells you calories and you can read comments, some substitute and tell results. It's neat.
