Hey dips, the club is open

And we're posting dip recipes, if you couldn't tell.  Hot or cold dips will do!  New Year's Eve is tomorrow night and I'm sure there will be no shortage of dip recipes needed!

Our Featured Cookie is no dip...Michele already posted her Featured Recipes and they rock!!

Making this short and sweet because a) this browser is not easy to maneuver and post hyperlinks and b) I'm hungry.

  • This Roasted Eggplant Spread sounds good to me. Too bad Brian doesn't like onions. I wonder if I could substitute shallots and still get a great tasting dip... Hmm...

    Then, this Shore Is Good Seafood Dip also sounds good! 

    Here's a Three Cheese Hot Artichoke Dip by Paula Deen. Artichokes and cheese? Yes please!!  

    And, I just love this one! Easy Tzatziki with Toasted Pita Crisps (my sister's MIL makes Tzatziki w/ just sour cream, but I've got to give this recipe a try). Yum! :)

  • i'm not a big dip fan but i really liked robin's White Pizza Dip

     

    this is my family's favorite: 

    seven layer dip

    • 1 1/2 pounds ground beef
    • 1 (16 ounce) can refried beans
    • 4 cups shredded Cheddar-Monterey Jack cheese blend
    • 1 (8 ounce) container sour cream
    • 1 cup guacamole
    • 1 cup salsa
    • 1 (2.25 ounce) can black olives, chopped
    • 1/2 cup chopped tomatoes
    • 1/2 cup chopped green onions

     

    1. In a large skillet, brown ground beef. Set aside to drain and cool to room temperature.
    2. Spread the beans into the bottom of a 9x13 inch serving tray that is about 1 1/2 inches deep. Sprinkle 2 cups of shredded cheese on top of beans. Sprinkle beef on top of cheese. Spread sour cream very slowly on top of beef. Spread guacamole on top of sour cream. Pour salsa over guacamole and spread evenly. Sprinkle remaining shredded cheese. Sprinkle black olives, tomatoes, and green onions on top.
    3. You can serve this dish immediately, or refrigerate it over night and serve cold. I think it tastes better at room temperature.

  • I'm making this tomorrow!

    Hot Spinach and Artichoke Dip

     

    Ingredients1 cup thawed, chopped frozen spinach11/2 cups thawed, chopped frozen artichokehearts6 ounces cream cheese1/4 cup sour cream1/4 cup mayonnaise1/3 cup grated Parmesan1/2 teaspoon red pepper flakes1/4 teaspoon salt1/4 teaspoon garlic powderDirections

    Boil spinach and artichokes in 1 cup of water until tender and drain. Discard liquid. Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and serve hot. 

    CRAB DIP 

    Ingredients1/2 pound crabmeat1/3 cup shredded Swiss cheese1/3 cup parmesan cheese1/3 cup red onion, finely chopped1 tablespoon hot sauce, I like Cholula1/2 teaspoon Worcestershire sauceStepsPreheat oven to 350Mix all ingredients well and put in a oven proof serving bowlBake for 15 minutes, then place under broiler to brown topServe with crackers or something crunchy like baked won ton chips

     This is technically not dip but it sounds awesome! 

    Bourbon Brie 

    IngredientsOne 13 ounce wheel of brieAbout 1/2 cup chopped pecans3 tablespoons brown sugar2 tablespoons butter, cut into small-ish pieces1 tablespoon bourbonStepsPreheat oven to 350Place unwrapped wheel of brie in an oven safe baking dish - something nice enough you can serve it inTop brie with pecans, then brown sugar, then butter and finally drizzle with bourbonBake about 20 minutesRemove and serve with crackers

    Guacamole

     

    The ingredients needed to make guacamole are:

     

    2 avocados, peeled and pitted

    2 cloves of garlic

    1 medium tomato, finely chopped

    3 teaspoons of freshly squeezed lime or lemon juice

    1 tablespoon of jalape?o slices, chopped

    1/2 teaspoon of hot pepper sauce

    salt

    pepper

     

    Crush 2 cloves of garlic.

     

    Squeeze 1/2 of a fresh lime; we will need 2 teaspoons of the juice.

     

    Seed 1 jalape?o pepper and dice it into about 1/8 inch bits

     

    Cut one tomato in half, Squeeze out all the seeds. Chop the tomato into about ? inch bits.

     

    With a spoon, scoop out the avocado.

     

    For this chunky guacamole, use a fork to mash it. You could also use a potato masher if you like.

     

    Now add the other prepared ingredients to the avocado. Don't forget the hot pepper sauce!

     

    With a spoon gently blend everything together.

     

    Give it a taste and see if you need to add some salt and pepper.

     

    Enjoy!

  • Seven Layer Dip

     

     

     

    ? 2 cans of bean dip (10 1/2 ounce cans)

    ? 3 avocados

    ? 2 Tablespoons of lime or lemon juice

    ? ? teaspoon salt

    ? 1/8 teaspoon pepper

    ? 1 cup sour cream

    ? ? cup mayonnaise

    ? 1 package/envelope of taco seasoning mix

    ? 1 cup of green onion - chopped

    ? 2 1/3 ounces of canned sliced black olives

    ? 2 Medium tomatoes

    ? 8 ounces of cheddar cheese

    ? 1 package of Tortilla Chips

    Layer in a 9x13x2 inch serving dish:

    Layer One:

    ? Spread in dish the 2 cans of bean dip

    Layer Two:

    ? Peel, core and mash 3 avocados.

    ? Add 2 tablespoons of lime or lemon juice, 1/4 teaspoon salt & 1/8

    teaspoon pepper.

    ? Mix together and spread over the beans.

    Layer 3:

    ? Mix together 1 cup sour cream, 1/2 cup mayonnaise, 1 package of taco

    seasoning mix

    ? Spread the sour cream mixture over the avocados.

    Layer 4:

    ? Sprinkle over the sour cream mixture 1 Cup chopped green onion

    Layer 5:

    ? Drain and sprinkle over the onions a 2-1/4 ounce can of sliced black olives

    Layer 6:

    ? Seed, and dice and sprinkle over the olives 2 Medium tomatoes

    Layer 7:

    ? Grate and sprinkle over the tomatoes 8 ounces of cheddar cheese

    Serve with lots of Tortilla Chips!
