KitchenAid ice cream maker attachment users come in
So dh got me the ice cream maker attachment for Christmas. I'm excited, even though with my ibs I don't really handle ice cream all that well. But, I can do sorbet, probably gelato and if there's a low fat ice cream (maybe half and half instead of cream?) I can probably handle it. Can you make ice cream this way with soy milk? I know I've heard lots of you ladies mention making ice cream at home, so got any recipes or tips to share? Successes?

Your attachment should come with a booklet that includes recipes, and I think it has sorbet recipes in there too. That will probably give you the best sorbet results.
As far as ice cream: You can try doing regular ice cream with a less-fatty dairy product, like half and half, but it will dramatically change the texture. I have no experience with making soy ice cream or frozen yogurt, but Google it and see what you find. As reference, I've made Alton Brown's "serious vanilla ice cream" recipe with my KA attachment several times with excellent results, so that's proof that online recipes can work well in the KA attachment.
It might take some trial and error as far as finding the right recipe.
Don't forget to pre-freeze your bowl overnight, and let whatever ice cream/sorbet base you use cool completely in the fridge before you run it through the KA (good to do overnight for this too). Have fun!
