Amanda - recipe for salad

Here's the recipe for the avacado, corn and black bean salad.  Don't mind the editorial comments; this was c&p from an email to a cousin.

 

Ok, here goes (and remember, you can adjust the veggies as per your preference. I usually don't put the red pepper in, and I used half of what the recipe called for for the crab picnic batch. Also, I tend to make the dressing and then add a little at a time until you get the desired taste. I usually end up with extra dressing):

Dressing:
1/3 c fresh lime juice
1/2 c olive oil
1 clove minced garlic
1 tsp salt (I add a little at a time and taste as I go)
1/8 tsp cayenne pepper (I have never used this and it wasn't in the one at the picnic)

Salad:
2 (15oz) cans black beans, rinsed and drained
1 1/2 c frozen corn kernels (I just add them right from the freezer!)
1 avacado, pitted, peeled and diced
1 red bell pepper
2 tomatoes, chopped
6 green onions, thinly sliced (I substitute red onion for this, about 1/2 of a medium or lg one, depending on how much you like onion)
1/2 c chopped fresh cilantro

1.Place dressing ingredients in small jar and shake until well mixed (can also use a blender)

2. In large bowl, combine veggies. Mix, add dressing to taste

It's really easy, just takes a while to chop all the veggies. I think that I doubled this recipe for the picnic. And don't be like Brendan and forget to buy the beans!
