My husband is type 2. He stopped taking meds 5 years ago after losing 100 pounds, and hasn't had worry about it since. He would check his sugar once a month or so and it was always normal.
We both gained a bit of weight since the wedding, and his sugar went up to almost 500! He had to go to the hospital and get a saline IV to help get his sugar down, and is now on meds. It's been a couple of days, and he's still just under 300. (Normal for him is 90-130)
He has to go on a very low carb diet and maintain it for life. I decided that if he can't have it, neither can I, because I can't have high carb foods in the house to tempt him.
Does anyone have any good low carb or diabetic recipes? Also, any good websites I should look at? We're going to get bored so fast if all we eat is baked chicken and veggies. I made califlour mashed potatoes today, and they were surprisingly good

So I was in the emergency room last night until 3am while hubby got a cast put on his broken hand and noticed a whole slew of boring "eat healthy" magazines. I almost took one home, though, 'cause all the recipes in there were AMAZING looking. And go figure, it was for diabetes. I didn't take the book home, but I do remember the website for the recipes. Hi! you can get this cookbook on amazon and I must say its one of my favorites,
"Betty Crocker's Diabetes cookbook, Everyday meals easy as 1-2-3"
they have some the best recipes in it that are not only healthy for you but are REALLY good. they cover breakfast, lunch dinner and dessert in it! Are go-to recipe in it is the chicken and rice with Autumn veggies. you might also be able to find it at a local used/new book store too.
