We are trying to be healthier all around and I'm looking for new ways and ideas to cook things that are healthier. L is 27 and has higher cholesterol than the MD would like. He's giving him 6 months to improve, or the MD will put him on meds. I would really like to just start making him eat better because I would really rather not lose him to a heart attack in his early 50's.
I ordered "Eat-Clean Diet Recharged" by Tosca Reno today so I'm hoping that will give me some ideas!
Here's the problem: L doesn't like veggies....or fruit. He thinks he is healthy because he doesn't eat sweets. In his mind, potatoes (cooked in any form or fashion) is a serving of veggies. The kicker? He's not overweight at all.
Do any of you have picky husbands? What do they eat? Do any of you eat clean? Is it hard?

We've gone to eater cleaner, but it's hard b/c DH can be a picky eater.
If I throw veggies into something and they're cooked, he will eat them. So a crock pot full of veggies for pot roast, he loves. I've started adding diced tomatoes to pasta and pork and he'll eat that. DH does love salad, so that makes it a bit easier. Also beans, if I make enchiladas or salsa chicken I always throw in some black beans or pinto beans. He doesn't even notice.
The biggest thing for him is the boy loves his rice side dishes, we eat brown rice a lot, but I'm still learning on how to jazz it up. Oh and alfredo sauce, that is the worst, but he loves it. I'm finally working on making our own marinara so it's healthier.
Oh and as for your other post on ground turkey, DH would probably fliphisshit if I pulled a ground turkey for ground beef in tacos. What can I say the boy was raised with a mom who thinks green beans should be cooked to death and with lard (let me tell you I was aghast when I saw that the first time).

I would at least try something like salsa chicken and ask him to try it. I just throw 4 chicken breasts into the crock, cup or so of salsa, can of black beans, bag of frozen corn (I omite the cream of whatever soup that some recipes have). We usually freeze half to use later for lunches or another dinner.
I pair it with this spanish rice recipe http://allrecipes.com/Recipe/Spanish-Rice/Detail.aspx and the next time I'm going to use brown rice to make it. I do add some seasonings and kick to it, b/c the recipe is very bland otherwise.

IDK what eating clean is all about, but we try to eat real food -- stay away from processed / prepared food and keep it simple. Salsa chicken counts! I love to put a whole chicken in the crockpot for 8 hrs on low and it comes out really nicely. Don't eat the skin, and it's low-fat. Pulled pork in the CP, using pork tenderloin, is also a low-fat, tasty, easy thing.
One of the big things that we did to cut our saturated fat was to not eat cheese. It makes a big difference!
As for eating veggies, I just don't know how to get someone who doesn't like veggies to eat them b/c we both love them. And MH likes almost anything I make, so I can't help you there, either
MH is the one who introduced ground turkey to me. I guess the easiest way to introduce stuff like that is to start slowly -- with the higher fat turkey and then go to the 93% when he's used to the other stuff; same with milk.
We both eat real food.
