Turkey Kielbasa and Lentil Soup
2 tsp olive oil
2 carrots thinly sliced ( I always add a little extra)
1 onion diced ( I usually use a medium size one)
2 garlic cloves minced
1/4 lb of turkey kielbasa, thinly sliced ( I usually use closer to 1/2lb, Mike likes meat)
1 1/4 cups brown lentils, picked over and rinsed
5 cups water
1 (14 1/2 oz) can of diced tomatoes
1 tsp salt ( I never add this)
1/4 tsp black pepper
Heat the oil in a large saucepan over medium heat. Add the carrots, onions, and garlic; cook, stirring frequently, until softened. About 5 minutes
Add the kielbasa, lentils, and water; bring to a boil. Reduce the heat and let simmer until the lentils are tender. About 30 minutes.
Stir in tomatoes, salt and pepper. Simmer until heated through. about 5 minutes.
makes 4 servings at 1 3/4 cups per serving.
This is from the WW momentum cookbook and the points value listed is 6. I havent checked to see what the new Points Plus value is.
I LOVE this soup. Its so simple and full of flavor, which comes from the kielbasa. Mike and my brother always add hot sauce to their bowls.
