Can you recommend any good vegetarian cookbooks or blogs? I would love to venture more into vegetarian cooking but don't really know where to start.

Try The Moosewood Cookbook by Mollie Katzen. Its completely vegetararian with options listed in the recipes if you decide to go completely vegan....plus the recipes are yummy.

Moosewood is good. I actually went to college in the city where Moosewood is located! And sadly, I wasn't a vegetarian then.
I have 2 faves. The one I think is most accessible is "How to Cook Everything Vegetarian" by Mark Bittman. It's huge, but it tells you everything you need to know about cooking... like everything. He has another book called "How to Cook Everything," but this one takes out the meat chapter and focuses more on alternative proteins and constructing a meal that's not just meat-side-side.
There's also an awesome vegan cookbook called the Veganomicon by Isa Chandra Moskowitz. It delves into things that might be a little out there for the casual non-meat cooker, though, like making your own seitan ("wheat meat"). It's also a little more involved/fancier vegan/vegetarian cooking. BUT she also has a website called the ppk.com (post punk kitchen) which has a bunch of recipes if you want to try that.
I follow some blogs, but mostly local stuff and vegetarian restaurant review blogs.
Good luck! I love to cook. Honestly, a lot of my meals involve just pasta w/ veggies and pesto or veggie burgers or bean and cheese enchiladas, but I also really do like to experiment when I have the time and money. No two weeks are ever the same around here!

Thanks ladies! I have actually made the spanikopita that is from the moosewood cookbook. Its awesome.
I will def have to look into the Mark Bittman book. I think my biggest concern is I have no idea how to incorporate protein that isnt meat into our meals to make a main dish. Not sure if that makes sense.
