Another recipe rave for Erin!

I made the Salsa Verde Chicken last night. I had some serious doubts about it when I put it in the oven, but it was delicious!  The dumplings were dry, so I'm  not sure where I went wrong with that... they tasted fine when mixed with the sauce from the chicken though, so it wasn't a big deal.  Shockingly, DH even liked it and went back for seconds!  DD said "this looks and taste like something from a gourmet restaurant".  Haha! 

Next time I'll use cilantro & green onions in the dumplings (I substituted with parsley which was fine too).

Thanks!!  Hopefully the leftovers will taste good for lunch!

  • I made it last night, too! Jesse said it was his favorite meal he's ever had, at home OR at a restaurant. 
     
    Next time I'll be sure to chop the herbs more finely because they don't really cook all the way through so the texture in the dumplings bothered me. But, yes- very, very delicious. 
  • So glad it worked out for ya Kris.  Did you use the called for amount of the salsa?  I'm curious to see if you found it too hot.

    I seriously love this recipe.  I will say, my dumplings were a bit dry (it's a personal problem!) but, I've also found that whenever I make ANY chicken and dumplings recipe the dumplings tend to be on the dry side.  Which is fine since you have all that delicious gravy.  YUMMMMMYYYYY!!!!

    I used about 3/4 of the salsa verde jar.  It had a little kick to it, but was definitely not overly spicy.  I checked the jar btw - it said "medium" on it.

    Thanks for the suggestion to poach the chicken, Pam.  That worked out wonderfully as well!
