snickerdoodle conflict

what's cream of tartar and what's the purpose?

jackie, i noticed your recipe has it but melissa, yours doesn't...

Re: snickerdoodle conflict

  • It has a similar rising effect as baking powder and activates the baking soda in the recipe...at least I think.

  • I specifically looked for a recipe WITHOUT cream of tartar because I didn't want to go to the store!

  • I will add thought that mine come out kind of flat, which I attribute partly to not having a sifter to sift the dry ingredients (I just stir with a fork to combine, which doesn't make them fluffy at all) but it could also have something to do with not using cream of tartar.

  • thanks, ladies.

melissa, do you think yours still would have been chewy w/ the cream of tartar? (pretty sure you said yours were chewy, not hard). jackie, were yours chewy or hard.

sorry, didn't mean to give you 20 ques about cookies!

  • Ummm.  Snickerdoodles.  I just found gluten free snickerdoodles and I have eaten almost all of them. Embarrassed

FWIW  - they do have cream of tartar.

Mine are so chewy. It just helps with rising. Mmmm. I am having one now.

  • late to the party....

the cream of tartar helps with the rising, but it also adds to the flavor.  a classic/traditional snickerdoodle has it, even though you can make them without it.

  • Nothing to do with anything, but last Christmas it took me 45 minutes in the grocery store to find cream of tartar.

  • Good to know ladies...I still haven't tried the recipe..kinda was cookied out by Christmas.  Maybe this weekend I'll give it a go and Alyssa where did you find it?  I wouldn't have a clue as to where or what I'm looking for.
  • Cream of tartar is with all the spices.
