So, I'm having a really hard time cooking for one...and eating. I have no appetite anymore. Sooo in order to eat and be healthy I am looking for new things to cook and try. Do y'all have and go to recipes? Or favorite things to cook? Any new exciting trends on the cooking scene? lol

Back in the day when I was cooking for one I ate a lot of chicken breast different ways because it's easy to pull on breast out of the freezer and make it. Also I ate a lot of those frozen veggies for one.
You could always scale down your normal recipes to make them for one, or make the whole thing, freeze the left overs, and eat them next week or whenever.
For some reason I think fondue would be fun for one, too. Never tried it though.

I like the casserole idea. I'm always afraid to freeze things because of freezer burn. Do the Pyrex lids or even Gladware/Tupperware keep freezer burn away? When you defrost and then reheat the food does it taste different or weird?
I do eat some chicken, but that gets boring really fast. I like salads but it's hard to make a salad when it's single digits out.
I've never baked a potato at home before. I LOVE that idea! thanks

I've never had a freezer burn issue but I usually eat the stuff within 6 months. When I put the lids on the pyrex dishes I use masking tape and write the date on it. When I pull it out I let it defrost until it's thawed and then pop it in the oven at 350 until its heated through and that makes it taste like it was freshly baked. If you microwave them it's not quite the same.
Def try baked potatoes! I probably eat one a week. Florentine (with spinach and cheese), peppers and onions with ranch dressing (my mom turned me on to that one), salsa and sour cream, brocolli and cheese, etc. Also try baked sweet potatoes if you like those. Mixes it up a little bit.
I love this idea! I'm going to do this one of the nights this week that DH isnt home.
I love caseroles and soups..but I've never had to freeze them before. they are easy to make, and so so yummy.
