Blueberry Cornmeal Muffins!!!

Got this recipe from my Fitness magazine. One muffin with 1/2 cup skim milk and 1 hard boiled egg (i dont eat the yellow) is 300 calories. Plus I would have some baby carrots with it. They are soooo good!!

In a large bowl mix 3/4 cup flour, 3/4 cup cornmeal, 3 T sugar, 1/2 teasp sea salt, and 1 1/2 teasp baking soda. In another large bowl mix together 3/4 cup fat free buttermilk, 1/4 cup canola oil, 1/4 cup light maple syrup, 2 teasp vanilla extract, 1 T lemon juice, 1 slightly beaten egg, 1/2 cup pecans, 1/2 cup blueberries. slowly add dry ingredients to wet and combine. mist muffin pans with non stick cooking spray ( i used liners) and pour batter into pans and bake at 350 for 18-20 min. Makes 12 muffins.
