Favorite make and freeze recipes

I'm thinking I want to make some lunches for the next few weeks, but not sure what to make. They need to be something that can freeze well and I can defrost in the microwave. Preferably Kosher (just no pork or shellfish) since I'm taking it to work. And healthy, which is why I'm doing this.

  • What about making some soup to put in containers in the fridge?  If you are going to eat it that week you won't need to freeze it.  I have a really good Buffalo Chicken soup on my blog.  I do a lot of my cooking on Sunday for all meals for the week.  If I know I am going to use everything I don't freeze it. 

    What about a chicken breast and spinach?  You could cook the chicken ahead of time. 

  • You could make some sandwich wraps with veggies, etc and freeze them. I do this and it works well. I just fill them with whatever I like and then defrost the night before.
