Re: Chicken Thighs.....
Crispy Ranch Chicken is great. this recipe is for boneless, skinless thighs. i usually make them with panko breadcrumbs since i don't usually have rice krispies.
you could do Buttermilk Roast Chicken with bone in, skin on thighs (this is even better if you marinate it overnight)
I just cooked up some last night. Simply seasoned with salt, pepper and garlic powder and a light spritz of Pam on top. Left about an inch between them on my baking pan. 425* for the first 20 minutes. 350* for the remaining 25 minutes, or until juices ran clear.
Using the leftovers and some chourico for a chunky chili tomorrow.
