We had pot roast with potatoes, carrots, onions and gravy.  It was quite yummy! Tisha could you share your quick recipe for chicken and dumplings?  I only have a recipe for the crock pot that takes about 6 hours so having a recipe that doesn't take as long would be awesome!  Thanks!

Now, last night was the first night I ever made them not from scratch.  My grandma's recipe takes a few hours to cook (you make the dumplings from scratch) and it SO MUCH better.  But these were pretty good for something so quick.

I went ahead and got some boneless skinless chicken tenders (had planned to just pick up one of those whole roasted chicken and debone it myself, but all they had were the BBQ rubbed ones).

I boiled the chicken in some chicken broth for about 15 minutes (or until it was done).  Then I took the chicken out (what my SIL said to do... no idea why reall) and set it aside.

I added another can of chicken broth and 2 cans of cream of chicken soup.  While that mixture was coming back to a boil, I opened 2 cans of biscuits, flattened them with my hand, and then cut them in 2.

I got a small bowl of flour ready and dipped each piece of biscuit into the flour before putting it into the boiling chicken broth mixture.  I let that boil for about 10 minutes, but had to stir it a few times, to make sure all of the bicuits stayed down in the broth.

And in the meantime, I tore up the chicken into smaller pieces.  After 10 minutes, I re-added the chicken and stirred it all again.  I covered it and let it cook for about 10 more minutes.  And that's it.
