cous cous chicken salad?

Did someone here post a recipe?  I'm looking for a tried and true one and could have sworn someone posted it....

  • YES!  I bought a rotisserie chicken and deboned it this afternoon.  It has so much chix on that I made this (substituted spinach for the basil, and red vinegar for the sherry) AND chix salad for two lunches.  SWEET!  I'm so excited for dinner tonight!  We are totally stretching our grocery budget with all these new and inexpensive recipes!

    I LOVE basil, but we ran out yesterday.  Hopefully the color will make up for the lack of herb.  :-)  I added some dried just to add some flavor.

  • The fresh basil does add a lot of flavor so I suggest using it if/when you have it.  And the sherry vinegar is good, but I am sure the red wine vinegar will also be tasty!
