Re: cous cous chicken salad?
YES! I bought a rotisserie chicken and deboned it this afternoon. It has so much chix on that I made this (substituted spinach for the basil, and red vinegar for the sherry) AND chix salad for two lunches. SWEET! I'm so excited for dinner tonight! We are totally stretching our grocery budget with all these new and inexpensive recipes!
I LOVE basil, but we ran out yesterday. Hopefully the color will make up for the lack of herb. :-) I added some dried just to add some flavor.
