Quick - Freezer Meals? (Enchiladas recipe maybe?)
My friend had a baby last weekend and I am going to see her on Saturday! I want to make her some freezer food.
I was going to make one batch of smoked gouda mac & cheese, and split it up so I keep half and give her half... but I want to make something else.
I am a fan of mac&cheese for dinner, but I know not everyone is... So I was thinking something with a little meat (maybe chicken or ground turkey or something)?
What about enchiladas? Or some mexican lasagna type of thing? Or anything delicious really... Anyone have a good recipe?

These enchiladas are awesome - and hold up well in the freezer. Just freeze the filled tortillas and sauce separately. This assures that they won't get soggy. She can just add the sauce before baking.
I love mac & cheese too. This buffalo chicken mac & cheese is awesome and includes the protein you're looking for.
I also really liked this pot pie penne and think it would be fine frozen.

I think I'll do your enchiladas and your buffalo chicken mac & cheese!! I'll make the smoked gouda mac & cheesse for myself another day since I know I like it - I'd hate to waste it on someone who won't appreciate it

How would I get shredded chicken? Can I just do that myself with chicken breasts? If so, how much do you think I would need for 3 cups?
