frozen dinners

I am getting ready to start freezing meals for after baby arrives and I can't think of things to make.  Any ideas on things that freeze well?  I want stuff that is super easy so we can just take it out of the freezer the night before we want it, stick it in the fridge to defrost, and then stick it in the oven for dinner.

So far I am thinking, burritos, lasagna, and baked ziti.  That's all I can think of.  I need ideas please!

Re: frozen dinners

  • I'm not sure if they freeze well, but what about enchiladas and/or soups? You could make some hamburger patties and freeze those for quick burgers. That's all I can think of!
  • Meatloaf, mexican casserole, you can pre-marinade chicken (stay away from lemon, though, and add it at the end...learned that one the hard way. Very lemony!), stock up on frozen veggies, any kind of soup (add potatoes upon re-heating, as their texture changes in the freezer), and chili.

    Yes!  thank you!  I was just telling H last night I had 14 meals frozen before she was born and now I can't think of what they were.  I so wish I still had that list!

     Yes!!!  I have meals in the freezer, I think 8 or 10 and I have been lucky enough to not use any just yet.  Now, H did try to ruin on of my skillets but.....  He is now no longer allowed to make grilled cheese sandwiches.  :)

    Bri, I had 14 meals frozen for after M was born and we didn't use any of them for a while.  I was really shocked at how good I felt so I just made dinner most nights (of course I was comparing two births, I think had that been my first it would have been diffrerent--I could def. feel it when I over did it).  I am hoping to not need to use them this time too because I hope to feel so good I can push a baby out and cook dinner all in the same day Wink  ha!  maybe not!
