Deceptively Delicious recipe rave

Hey ladies - work has been crazy, so I haven't had too much time to post lately, but wanted to share this since I'm working from home today and have a moment. 

So I finally tried out on of the deceptively delicious recipe ideas by Jessica Seinfeld.

I pureed up some cauliflower this weekend and froze it in an ice try so I had cubes of cauliflower.

I made some au gratin potatoes (for shame, from a box, but I just love the Betty Croker loaded potato variety) and instead of butter I added two cubes of cauliflower.

Not only did DH NOT notice, but he thought the potatoes were really good.  It actually kind of made them creamier.

I told him afterwards and he still took the leftovers to work and ate them.

I'll take any small victory to get DH to eat veggies.  If this worked for him, it's sure to work for anyone else's DH or kiddos.  I think next time I'll try 3 cubes, but I figured I'd start small and work my way up making sure it doesn't affect the taste.

I also tried putting pureed carrots in mac n cheese last week.  You definitely couldn't see them, but maybe it was because I didn't put enough spices in or something, but it wasn't up to par as usual.  I'm game to try that one again though.  I also bought some butternut squash to puree up this weekend as she recommends.

  • thanks for sharing! maybe try cauliflower in the mac & cheese next time. creamy mac is never a bad thing. nice work tricking DH!

  • I've been thinking about getting this book to help get M to eat a better variety of foods and more veggies.  I can not believe I have a picky eater!!!  I don't know what to do, this book might help!

    I think they are all picky eaters at this age.  Dom is super picky too but never was when he was a bit younger.  Now he eats carbs, carbs, carbs.  And maybe broccoli on a good day.

    Our biggest struggle with Maggie has always been food, I feel like every single meal with her since birth has been a fight to get her to eat and now I'm getting pressure from the Pedi because she's not really gaining weight.  I've resorted to smothering everything with cream cheese!  Oh well, hopefully she will get better as she gets a little older. She's really good with Eggs and yogurt now so that's something!  Just trying to find ways to sneak some more good calories into her.  and yeah, my girl is a total carb addict!

    good to know - I was thinking of making these.  I was considering the version without pb as an option for a smash cake for G. :)
