Are cake balls hard to make? And are they super time consuming? I would love to make some for the nurses taking care of FIL and MIL's co-workers, but time is an issue these days. Also, can I make them in advance and then put the chocolate on them a day or two later?

  • I have a couple hundred in my freezer and just take them out when I am ready to put the candy coating on it.

    They are comparable to making cupcakes. I think they are pretty easy to make. Making the actual balls are really the most time consuming part but it is not too bad. I have done 500 at a time and survived. Most normal cake mixes can make 60-90 depending on big you make them. I use a melon baller so they are standardized.

  • They aren't my favorite thing to make based on how messy I get, but I use my hands to mix the cake and make the balls.  Maybe I'll invest in a melon baller.

  • I make these a lot too.  I tend to make them in a two day period.  I make the cake one day, let that cool over night.  then the next day make the ball mixture(let that cool for a little while, then make the balls, let them harden in the fridge/freezer depending on time I have.  Then do the coating.  Good to know Whit that they can be frozen, I've made them the past couple years for 4th of July and sometimes I have a hard time finding the time all at once to make them.  I use a scoop similar to THIS.  It works great for them, though I find that part way though I need to rinse it as well as my hands. 
  • They are easy but time consuming. However most of the time is waiting.  I usually do them over 2 or 3 days.
    Bake and cool the cake. I usually do this in the evening and let it cool overnight.
    Mix the cake and frosting by hand and roll into balls, refrigerate overnight
    Dip the balls in the chocolate.

    They can be frozen once they are dipped.

    If I am using a soft cake (like red velvet) I will refrigerate them overnight, then freeze them for a couple hours before dipping.  Then I only take them out of the freezer 5 at a time.  Otherwise the get warm and soft again.  I don't seem to have the issue with regular cakes.

    My most popular mixture is devil's food cake with chocolate fudge frosting.  And I never used the whipped frostings.
