Weekend lunches/dinners

I need your help.

I've never been one to plan food or meals.  This needs to stop.  

I haven't talked about it to anyone in real life (except Pat), but I rejoined weight watchers this week and I really want to do well.  (So far so good).

So....I need to meal plan for this weekend.  The good thing about WW is that most meals are ok (I mean I'm not going to be eating lasagna or anything).  

So can you help me?  What do you guys eat on the weekends for meals?

  • We don't really plan lunch, as we eat it on our own over the weekends, typically sandwiches etc whatever is in the house...

     For dinners, we'll grill salmon/swordish/steak/shrimp/chicken on the grill The seafood we do w/ some olive oil, little lemon juice and some rosemary or another spice/flavor.Steak in A1-soy sauce, do that w/ some baby arugla, tomotos, and mozzerella (fresh) and some balasmic vinegar. Shrimp/Chicken grilled in w/ different marinades (check the sugar/calories). Grill up some veggies ( I love mushrooms/onions in balasmic) and usually a sweet potato, brown rice, whole wheat pasta if we are doing shrimp scampi or something. We mix it up a little and try to make a meal that is a little more "intense" than something we'd cook over the week. We'll also do shrimp cocktail (we make our own sauce) and relax w/ a glass of wine.

    We also make our own boboli pizza, whole wheat one. Brush w/ olive oil, mozzerella cheese (fresh) sliced tomatoes, and baby arugla, it's called a salad pizza:)  

    We love to go out for sushi as well:)  You can figure 50-60 calories per piece of sushi.

    We cook together on the weekends, and enjoy it.

  • Take a look at this blog. Everything she makes includes the WW points. I've made a few things from it and they are all good and easy to make. I use her parmesan turkey cutlet recipe as a base a lot, sometimes subbing chicken cutlets for turkey. I'll add in some roasted broccoli or green beans and that makes a good meal for us.

    I usually cook a time and/or labor intensive meal on Sundays. Usually a stew, soup, or baked pasta dish. My mom's beef stew recipe is amazing and healthy. We also like to grill outside on the weekends when it isn't too cold. We'll marinate/season whatever meat and make potato and veggies packets to throw on. Easy and delicious.

  • Exciting! I absolutely love this recipe that someone posted here quite a while ago.  It's actually a Weight Watcher's recipe for Chicken Taco Chili.  I'm making this chili on Sunday and expect it to feed us a couple of lunches throughout next week as well. I typically serve it with corn muffins. :)

  • First, good for you!!!!

    Lately, we have been making a lot of soups and chili and putting it in the freezer. I will tell you that PW's minestrone is really good, and pretty easy to make. You can probably take the pasta out or use whole wheat. I know ww has a good white chicken chili and taco soup that are not bad. I saw this recipe for cornbread (if you like cornbread...) Chicken burgers, black bean burgers, sweet potato fries (I've also oven baked squash and zucchini before and I love it!)

     Skinny Taste is a site I have made a few dishes from. I'm not sure if it includes points, but good variety to mix up meals and get ideas. Hope this helps a little!

  • Jo - I have her blog in my google reader, I really like it.  

    We used to grill a ton (and still would) except a stupid squirrel ate through the hose that connects the propane tank to the grill.  We've looked into replacing the hose, but figure we'll just buy a new grill in the spring as I've had this one for 10 years or so and it's just a very basic grill.

    I like the idea of shrimp.  Very low in points and something we both love.

  • Well Steve and I have horrendous habits on the weekends and we had been going out.  Since I limited his Chipotle to 2 times a week, he goes on Fridays for lunch with coworkers and then we go for Sunday for lunch before football starts.

    Saturday used to be another fast food day or I had to fend for myself (Steve doesn't eat before he goes to ultimate frisbee because it makes his stomach upset), but when the college football season started, we started buying lunch meat in order to make sandwiches.  Otherwise, I tend to do more elaborate breakfast/brunch things if I sleep in.

    Omelets (1 egg, 1 white) with fresh vegetables like tomatoes, spinach, mushrooms, peppers, etc.  A little cheese and/ham.

    Egg sandwiches on whole grain english muffins or flat bread

    Steel cut oatmeal with sauteed roasted apples (the oatmeal takes longer than the apples)

    I also eat a lot of leftovers on the weekend because I'd rather spend time doing the stuff I can't do on the weekdays.

     

  • Btw, after one of your emails the other day, I had a dream that I quite my job and became a professional meal planner/preparer for you.

    My dream life is so much more awesome than my real life.

    This was a soup I just made and it was delicious. I added fresh spinach to it too and I wish I could eat it every night.  I used hot turkey Italian sausage and it brought the "heat" on a good winter night.

  • Yes!  I need a meal planner! :)  There is a place around here that does just that actually and I have considered it!

  • I love skinny taste!

    On weekends we usually have lunch leftovers from whatever we had around during the week.

    Saturdays we usually do a grilled piece of meat or fish, starch, and veggies for dinner.  Sundays I spend more time cooking and will do soup/ stew/ casserole/ whatever that we can eat on for lunches during the week.

    We also generally have a larger breakfast, eggs and toast, or breakfast burritos.  DH loves to cook breakfast!

  • First off, I am excited for you!!

    We eat a ton of chicken and pork!  Lately I've been into a light coating of Panko Bread Crumbs (I use one brand found by the stuffing, not in the seasoning aisle, you get way more for your money).

    With that, I do veggies and a salad.  We do veggies and salads with everything!

    A new recipe that i just tried was filleting the pork chops and filling them with stuffing and folding them back over to bake, turns out really yummy!

    Another new one I just tried was: using 1/3 c light sour cream and mix w/ 1 can fat free cream of chicken.  Spread on bottom of 9x13 baking dish. Cut up chicken to bite size pieces and mix with prepared stuffing.  Sprinkle on top of mixture in dish.  Then add frozen veggies on top of that and bake for 30 minutes.  Very tasty!

  • Jaime- I've heard there's a "new" way of counting points.  How is that seeming to work out.

    As far as meal planning is concerned, I'm a creature of habit.  For breakfast, I grab a banana and coffee.  Since meeting with the nutritionist I've also added a protein like string cheese or almonds.  Lunch consists of a sandwich with turkey or roast beef, a slice of provalone cheese, a yogurt for protein, and some type of veggies-typically carrots. Dinner is some type of chicken with a veggie (broccoli, cauliflower, brussel sprouts, asparagus) and brown rice.  This usually leaves me with enough carbs left in the day for a 100 calorie popcorn bag or a small cup of ice cream.

    Baked potatoes are also a good lunch option.  Throw some greek yogurt on top (super high in protein) with some salsa (low cal and lots of flavor).

    The gals gave some great blogs and recipes. For us, the weekends are alot better b/c we can cook and bake a ton and then save it

    I cook ground turkey meat (with homemade taco seasoning) to make tacos or chili or casserole.

    Examples - on the old program a banana was 2 points, new program is 0.  Old porgram a skinny cow ice cream was 2 points, now it's 4. 

    There is still your daily allowance and your weekly 'overage' as well.  Most other things are the same, just how you calculate the points is totally different.

    I'm really glad to hear you're not "penalized" for eating fruit.  This bothered me with the old system.  And I suppose it's good that ice cream is now more points (although I'm not totally convinced Wink)

    I think this is fantastic. I've never done WW, but I'm really glad they went this way. People have great success with the program, but it's nice to see them focusing more on "good" foods.
