I need menu help too

I'm having a rough time with this one.  I joined a mom group recently.  One of them is having a kid so we wanted to have a little luncheon.  I offered my home, but everyone said they would bring something.  I won't really know what people are bringing until then. 

There will be 7-8 women and anywhere from 5-12 kids.  I don't know these women well, but I know that there are no diet restrictions.  It's lunchtime, but I don't want to over prepare.  I also want it to be nice for the mom.

So, I'm thinking: baked mac and cheese; spinach salad; peanut butter dip with apples, celery and crackers.  I want to do a sandwich or something, but all I'm coming up with is deli wraps.  I'm also a little lost on dessert.  One thought is cheesecake, but I don't know with the kids.  Another is straight up chocolate chip cookies.  I don't really want to make more than one dessert, but will.

Again, this wouldn't be all the food.  There would be offerings from everyone else.  I just want a bare minimum to feed people.

    I think you have the main courses covered pretty well.  Sandwiches would be a good addition- maybe small croissant sandwiches- you can do chicken salad, tuna salad, turkey or ham and cheese. 

    For dessert I'd think about cupcakes.  Adults and kids will eat them.

  • I should state that I absolutely despise cupcakes.  I don't understand the appeal of making, eating, or serving them.  I know I'm very much alone in this.
  • Ha!  And ugh!  Do you remember last summer when I was in these shoes, where everyone said they'd bring something, and I posted half a dozen times trying to figure things out?  Such a pita.  If you don't remember me posting, it's ok, because I don't remember how it turned out! LOL

    Here's my take from the few of these I've dealt with.  People are likely to bring things like hash brown casserole, baked mac & cheese, a cheesy rice casserole, corn casserole.  They are not likely to bring an actual entree.  I'd be sure to do that as the host.  I like your veggie & fruit plans.

    What about your ever-reliable chicken salad?  On croissants? (Going down this thought, egg salad and tuna salad as well?  You'd have to know the group.)   A full size quiche?  (You know no one's bringing one of those lol.)  Some sort of ham & cheese sandwich? (Or a deli platter...ugh...a nice deli platter on your own dish?)

    You're not.  I don't despise them, I mean, if one's served to me, I'll eat it.  But I sooo don't understand the mania about them these days.  I mean, people have taken a child's food and made it haute cuisine.  And WTH for?  They last for three bites!  I don't have enough time in my life to painstakingly decorate 2 dozen of anything.  And I'm not so crazy about the icing on my teeth thing...

    I didn't speak to desserts above, sorry.  I vote for CC cookies or regular brownies or, maybe, gettin' adventurous here, that Betty Crocker CC cookie-brownie combo mix ;)

  • Excellent points on the mac and cheese.  I was just thinking hot would be easier for me.  Maybe I'll do a broccoli slaw instead?  Or maybe a hot veg?  I'd love to do bacon wrapped green beans, but it doesn't go at all.  They just sound really, really good right now.

    I had a little issue with chicken salad during this pregnancy.  I can't even make it right now, let alone eat it.  Maybe I'll do that hot ham and cheese thing I've seen posted here?

    I know I'm overthinking this.  For some reason my food is considered weird in this town.  A friend even referred to it as "your people food."  It never seems crazy to me or my family.  It's not like I'm from Thailand either.  I grew up 90 miles from here.

    Then again they think a mango is a pepper here.  Imagine my face when someone was talking about stuffing a mango with hamburger,rice, and tomato.

    How about meatballs? Everyone loves meatballs and you could put those in a crockpot and go, easy peasy. I also like the ideas of homemade coleslaw (or a side you like) and sandwiches...deli meats and cheeses with different breads, mustard, mayo, maybe a doctored up mayo (either zesty or garlicy), lettuce, sliced red/purple onions and tomatoes. I'm sure people will probably bring chips, veggies and dip(s), pasta salad or casseroles so I'm thinking even if none of those showed up, look at your plate...you have a sammich, coleslaw/other side and meatballs....you're good, lol! I also have a drink recommendation, nothing 'special' but I LOVE it...cranberry juice/ginger ale spritzers - mmmm!!
