Delicious Mexican recipes...

Anyone have an awesome Mexican recipes to share???  DH loves Mexican and as part of his birthday gift I promised him one Mexican meal a month and I need some ideas for this month's.  His BF is coming over to share in this meal as well on Thursday.

  • I don't have a recipe for it, but I make enchiladas a lot. Just get fajita-sized soft tortilla shells, fill it with your faves; beef/chicken/shrimp/pork, corn, refried beans, black beans, rice, cheese, etc etc. Snuggle them all up in a baking dish, pour enchilada sauce over it, top with cheese. Serve with tomatoes, lettuce, salsa, guac, sour cream, more cheese and fixings, etc. Really easy and delicious!
  • Cheese or chicken queadillas with a spicy tomatow soup.  Fajitas.  Chicken tacos.  Chipotle pork roast

  • I like to make fajitas with chicken, peppers, and onions.  Black beans and spanish rice on the side.  And I buy salsa from Pepito's.  Simple and delicious.
  • I just made carnitas burritos on Saturday.

    I just bought a pork butt, seasoned with salt, pepper, cumin, & oregano and put it in the crockpot with sliced onions, garlic, a chopped up jalapeno, and some chicken stock. After about 8 hrs, take it out and pull it apart like you're making pulled pork. If you want, you can stop there, but if you want to kick it up a bit, take chunks of the pulled pork and fry it in a pan with a little canola oil until it gets just a little crispy. Then put it in a tortilla with some grilled onions & peppers, salsa, sour cream, refried beans (if you like them), rice (if you like that in a burrito) and cheese. 

  • This recipe is really good. I first had it at a work potluck. I don't really like beans, so I skip those.

    Chalupas

    INGREDIENTS:

    • 3 to 4 pounds boneless pork loin roast, trimmed
    • 2 garlic cloves, minced
    • 2 tablespoon chili powder
    • 1 tablespoon ground cumin
    • 1 teaspoon oregano
    • 1 can green chile peppers, chopped
    • 2 teaspoons salt, or to taste
    • 2 cans (15 ounces each) pinto beans, rinsed and drained

    TOPPINGS:

    • Grated cheese
    • Chopped onions
    • Tomatoes
    • Lettuce
    • Sour cream
    • Coarsely crushed tortilla chips

    PREPARATION:

    Place first 7 ingredients in slow cooker, along with 1/2 cup water. Cook 8 to 10 hours. Add beans 1 hour before done. Top with desired toppings and serve with warm tortillas.

  • This is my family's (and now all my friend's) favorite chicken enchilada recipe.

    The only "changes" we make are adding more of what's there.  More cheese (and using taco seasoned cheese), more sauce, and sometimes even a little more of the refried beans.  We use 1 large can of regular enchilada sauce to pour over the top, and then have another small can (we get hot) to add to individual servings when you put them on your plate.  We garnish with some lettuce, sour cream, sometimes black olives and sometimes green onion.  Paired with some taco/Mexican rice is to die for.

  • This is my former MIL's recipe and it's the BOMB!! 
     
    Cheese Enchiladas
    1/4 cup butter
    1/4 cup flour
    1/2 tsp salt
    2 cup milk
     
    -mix in a saucepan, cook and stir until thick. 
     
    Add 2 cups cheese (I usually use a sharp cheddar)
     
    dice 1 small onion and set aside...
     
    (now comes the messy part!)
     
    spRead some ench sauce on the work area of a counter.  Cover both sides of a flour tortilla with the sauce.  On one side add some onions and approx 1/4 cup of the cheese sauce.  Roll and place in a greased baking pan.  When all are rolled and done, add the leftover ench sauce TO the cheese sauce and mix.  Pour the combination over the rolled enchiladas.  Bake for 30 minutes on 350 degrees. 
     
    Too make Chicken ench's I cut the raw chicken breast into 4 pieces and boil with a packet of fahjita seasoning.  When chicken is cooked, drain water and pull the chicken apart with forks so it's in smaller pieces.  Then to get a little of the extra water out of the chicken, I place back in the pan and "fry" for about 4-5 minutes.  Add this in when you put the onions and cheese mix. 
     
    To make beef, I just ground the beef and mix the fajita seasoning in with NO WATER!  Or it gets WAYYYY to watery!
