Delicious Mexican recipes...
Anyone have an awesome Mexican recipes to share??? DH loves Mexican and as part of his birthday gift I promised him one Mexican meal a month and I need some ideas for this month's. His BF is coming over to share in this meal as well on Thursday.

These are my two favorite.
Cream Cheese Enchiladas
Buffalo Chicken Enchiladas
I just made carnitas burritos on Saturday.
I just bought a pork butt, seasoned with salt, pepper, cumin, & oregano and put it in the crockpot with sliced onions, garlic, a chopped up jalapeno, and some chicken stock. After about 8 hrs, take it out and pull it apart like you're making pulled pork. If you want, you can stop there, but if you want to kick it up a bit, take chunks of the pulled pork and fry it in a pan with a little canola oil until it gets just a little crispy. Then put it in a tortilla with some grilled onions & peppers, salsa, sour cream, refried beans (if you like them), rice (if you like that in a burrito) and cheese.
This recipe is really good. I first had it at a work potluck. I don't really like beans, so I skip those.

PREPARATION:
Place first 7 ingredients in slow cooker, along with 1/2 cup water. Cook 8 to 10 hours. Add beans 1 hour before done. Top with desired toppings and serve with warm tortillas.
This is my family's (and now all my friend's) favorite chicken enchilada recipe.

The only "changes" we make are adding more of what's there. More cheese (and using taco seasoned cheese), more sauce, and sometimes even a little more of the refried beans. We use 1 large can of regular enchilada sauce to pour over the top, and then have another small can (we get hot) to add to individual servings when you put them on your plate. We garnish with some lettuce, sour cream, sometimes black olives and sometimes green onion. Paired with some taco/Mexican rice is to die for.
