  • I'm making chicken tortellini soup with kale tonight.  I have nothing else planned for the rest of the week though, so I need some inspiration.

  • Since I had to take today off I am making meatloaf, mashed potatoes and a veggie.  Otherwise it would have either been chili cheese burritos or grilled cheese.

    A different take on your average potato skins. These versatile little bites are great as an appetizer for a cocktail party.

    Roasted Sweet Potato Coins with Pancetta and Chives

    • 2 Sweet Potatoes
    • 6 Clementines, juiced (or other citrus juice equivalent to about 1 cup)
    • 2 Tbsp. Brown Sugar
    • 2 Slices Pancetta
    • 1/2 to 3/4 Cup Sour Cream
    • 4-5 Chives, snipped

    Preheat oven to 350.

    Cut sweet potatoes into thick rounds.  Toss with clementine juice and brown sugar.

    Transfer potato coins to a parchment lined baking sheet.  Bake for one hour, flipping once halfway through.

    Meanwhile, cook the pancetta over medium low heat until cooked.  Crumble and set aside.

    Remove potatoes from oven and let cool 5 minutes.  Transfer to a serving platter.

    Put sour cream into a piping bag with a decorative tip (or a plastic baggie with a corner snipped.  Pipe onto coins and top with pancetta and chives.

  • Since I'm not allowed on my feet DH is doing all the cooking.  I think we're having breakfast for dinner.  He doesn't get home from work late, and thanks to my still somewhat present morning sickness I can't really eat much meat and he's doing a low carb diet, so it leaves us pretty limited.

    I learned the idea from the Hungry Girl cook books, but adapted it to my own method...I take chicken tenders (or thin cut chicken breasts) and coat lightly with whole wheat flour, then dredge in egg beaters (I have tried this with egg whites but it doesn't work as well), then coat with whole wheat panko bread crumbs (I use the ziploc bag shaker method)....then just bake until cooked through. They come out soooo crispy and delicious and so much healthier than fried!! Our favorite way to eat them is to then toss with Frank's Sweet Chili Sauce, if you like a kick....

  • I have a pork butt in the crock pot now for some pulled pork sandwiches. Tomorrow will probably be chicken tacos and last night was baked ziti.

    Thanks! I have a buffalo version, where you dip it in flour, then Franks Red Hot, and then panko and bake, but it's too spicy for Beckett and I've tried using (whole) egg or playing with other sauces to replace the hot sauce with so-so results. Never thought of eggbeaters. I definitely will give it a try! Also, where do you get your whole wheat panko? I've only found the regular.  

    I hope you like the soup! My husband LOVED it!

  • I have only found the WW panko at Publix...it comes in a yellow bag:) If the hot sauce is too hot for Beckett, you could try honey mustard if he likes that! It is also delicious:)

    Why the sad face? I've always had great results on SBD and it also made me more aware of what I was eating. I have lots of yummy recipies I found while doing it that I'd love to share with you.

     

    I'll post when I get home since I'm currently at work.

    It was breakfast for dinner for us tonight too!!  We are on an omelet kick lately!
