Tonight i'm planning on frying up some fresh scallops and asparagas... maybe some mini red potatos too!
DH hasn't been home all week, so to occupy my time, I cook!
kmason, those scallops sound YUMMY.
lunch is my plain stupid chicken pita, with carrots, apples, and cheese throughout the day.
dinner is still undecided: tortilla soup (from p dub) or a pasta dish that i just kind of created in my head: ziti with the precooked chicken sausage i have with some garlic, brocolli raab, maybe some chicken broth and cream in there...we shall see when I get home!

I have no idea what I'm eating for lunch. Probably whatever I find in the fridge. Dinner is spaghetti and meatballs I made on Sunday but we didn't eat. I just need to make noodles.

I printed out that recipe too. I'm hoping to make it this weekend.
Breakfast is coffee, a granola bar, and more coffee. I didn't have anything else for breakfast so I just had to bring a granola bar. I do have a package of oatmeal at my desk from before the wedding, and if I get really hungry I might have to eat it.
Lunch is a chicken, zuchinni and mushroom stirfry that I made on Monday night. I was going to have it for lunch yesterday but Richard and I had a surprise lunch date.
Dinner, IDK. I have chicken breast & greek yogurt, hmm...what can I make?
I signed up for SparkPeople last night, because I realized I'm eating way too much. And now all I can think about is food.
I brought a Lean Cuisine (chicken carbonara) for lunch, and an apple (super good Fuji, with a TB of peanut butter) for snack.
Not sure what to make for dinner, but I'm on my own because H has an early hockey game tonight. He hates mushrooms and I have a few leftover (bought for omelettes last weekend), so I'll probably make a sauce with the sauteed mushrooms, broth, and a little cream to go over chicken.
Lunch was crackers since I walked out of the house without lunch. Oops.
I have no idea what's for supper. Jeremy has class tonight and doesn't get out til late so it might be a take out night or leftovers.
I'm eating a turkey and cheese sandwich, baked Ruffles and an apple for lunch. Bor-ring.
I'm thinking about chili for dinner, but I dunno yet. I don't think I have everything I need and I'm betting the grocery store will be a madhouse with the impending snow storm.
I REALLY want tortilla soup instead of this stupid sandwich right now. That sounds awesome.
I'm hungry for anything other than what I have for lunch, OR what I have at the house to throw together dinner.
I splurged yesterday and got subway, so today, I have to stick with my Smart Ones meal.
DInner- Not sure yet. It's been a while since we've been grocery shopping, so I'm not sure what I'll be able to throw together with the food we actually do have. :-/
Lunch will probably be creamy chicken wild rice soup. It is almost gone! I have been eating it for every meal since Sunday.
Dinner is going to be spaghetti at my parents' later.
I have an awesome chicken tortilla soup recipe, and it's good for you:
1 lb ground turkey
1 chopped onion
1.5C chopped celery (optional, I don?t use)
2 packages taco seasoning
1 15 oz can tomato sauce
1 15 oz can chopped tomatoes
1 can chicken stock
1 small can chopped green chilies
4 16 oz cans beans
1 can of corn or 16 oz bag frozen
1 package HVR dry dressing mix
2TSP cumin
1/4C ketchup (optional, I don't use)
Brown turkey with celery and onions. One by one add remaining. Don?t drain any cans, dump it all in. Heat through and simmer OR put in crock and cook all day.
Add low fat cheddar and dollop of FF sour cream to top.
Now all I'm thinking about is Tortilla Soup. Sounds so goooooood. Except I cheat and put lotsa avocado's in mine.
For lunch I have some leftover chinese from lunch yesterday.
For dinner Sam requested tofu with miso soup and rice.
Geez, can I be more Asian? (minus the whole love for tortilla soup thing)
