I just made the yummiest, not chocolate cupcake ever!
My niece's 3rd birthday is this weekend and I am so excited. I got one of the big cupcake pans to make her a cupcake cake and it turned out amazing. I am going to frost it tomorrow so it doesn't get wrecked during our 2.5 hour drive there, so I will post pictures then. My sister wanted something a little bit healthier, but still tasty and I found a Sweet Potato Cupcake recipe. OMG, it is amazing. I wanted to eat the whole thing so I made a batch of cupcakes too. Now they are sitting in my kitchen and I am practically sitting on my hands not to eat them all.
I substituted fresh sweet potatoes instead of using canned and doubled the amount of vanilla, but everything else I followed to a tee. Plus, I got to use my KitchenAid mixer and what girl doesn't love any excuse to use that?

And Amen to the stand mixer. I abuse the thing like mad between November and December, but not as much after that... a batch of cupcakes is a great excuse though!
