     Mini butternut squash chicken pot pies, mini berry walnut tarts, and chocolate orange sandwich cookies.

    Eggplant Parmsean for tonight

    Posole is in the crockpot for tomorrow's dinner. I will make some homemade lime corn tortilla chips tomorrow.

    I cooked the ground turkey and additions for sloppy joes for dinner on Wed. That will go with some pepper jack mac n cheese.

    No baking this time. I will probably do that this upcoming Friday (my day off) while I wait for the DSL AT&T guy to get here.

  • We crock potted this weekend. T made beef stew with it on Saturday and I did a fabulous veggie pot pie with a biscuit crust on Sunday. I also made a butternut squash and spinach gratin to munch on this week.
  • Made 3 baby shower cakes, a lego cake and a bowling themed cake...I wonder what is in store for me today .....

  • I made the brownies from the recipe someone posted on here. They turned out pretty good except my coco powder was a little expired (I didn't realize it until I started baking) and it tasted a little funny but the brownies were still pretty good. I left out the walnuts but I definitely need to put in some chocolate chips next time.

  • I made some oatmeal applesauce cookies.  They were pretty good.  DH said  they tasted healthy, but he ended up eating a bunch of them.
  • I made ginger cookies to exorcise the previous-tenant smell in my house. It worked on the smell, but I was disappointed in the cookies overall. I LOVE ginger/molasses cookies, and need to find a better recipe.

  • I prepared PW's Basic Drip Beef yesterday and plan to eat it tonight for dinner (thanks to last week's post - someone here made them and it sounded yummy!).

    I finally finished putting them together and the overwhelming consensus was that they are fantastic.

     I'll do you one better! I'm going to post a blog entry about them WITH pictures. I'll let you know when I type that up (probably Wednesday since I'm swamped with HW right now).

    I think those were my brownies. I omitted the walnuts and used Ghiradelli cocoa powder. It totally makes a difference!

    I made those again this weekend, along with a Cranberry Vodka Cooler and crab puffs for my party.

  • Super yummy Lemon-Blueberry Bread - though my son calls it cake...he could be on to something, it is more like cake than bread. Yummmmmm............
