You can do this. I actually have an entore cookbook that is nothing but chicken recpies. I'll flip through it today and see what fits your other criteria. Finding little ways to change things up will help keep it interesting.
You can do this. It's tough right now, but soon it'll be easy and then you won't even think about it anymore. It'll feel normal. And you won't want to go back to how you were eating before.

You can't have any carbs other than fruit and beans?! That's tough.
I love blueberries w/ yogurt or cottage cheese. We get frozen wild blueberries -- they're smaller, so they thaw within a few hours, and they're cheaper than getting them fresh.
Love smoothies w/ frozen fruit and yogurt -- you just need to thaw the fruit a teensy bit if it's something big like whole strawberries or peach slices. My rule of thumb for a good smoothie is to have a good base like an entire banana or a cup of peaches, then add one or two zingers like berries or kiwi, but in less quantity than the base fruit. Mmmmm... especially partially frozen!
Sucks you don't like eggs. Egg whites are the perfect diet food -- tons of protein and vitamins but so few calories. You don't like them scrambled or in an egg salad?

Next up on my list of ideas is salsa chicken over a salad w/ beans. (chicken breasts plus jar of salsa plus crockpot on low for 8-10 hours)
