I saw some beautiful parsnips at the market when I went, so I picked them up.
Now I'm debating on what's a good way to cook them. I was debating just steaming them and seasoning them, mashing/pureeing them with some potatoes...
I have to imagine there are much better recipes out there that highlight their flavor verses hide it. Anyone have any favorite ways to prepare these?

I'm sure you could use Parsnips instead of Turnips in PW's Turnip Gratin
not a specific recipe but i made parsnip oven fries while visiting my friends. we basically cut them into sticks, tossed with a little olive oil, salt, and pepper.

lol my hubby has been asking for parsnips! its funny you posted this cuz not many people i know eat parsnips haha.
i went to the store the other day and they were all sold out! i'll have to run there again maybe tomorrow!

This recipe is fantastic! You need to go out and get more root veggies though (but I suppose you could make it with all parsnips)
