I want to make your garlic chicken.
I was looking at the recipe and 3lbs of chicken seems like a lot for just me and kevin, do you cut it down for just 2 people?

I used 1.25lbs of chicken along with the same amount of everything else when I made it this weekend... It turned out just perfectly.
ETA: This made 4 small pieces of chicken- so we ate it with toasted sourdough (necessary for the garlic) and a salad- and then had 2 pc left over for lunch the next day.

Thank you! That's kind of what I figured. I loooove garlic so I'm not afraid of it being too much lol.

Hahaha, see OP, I just edited it to tell you what I did with it.
And I made mine in the oven because I really like to use my dutch oven and I rarely find recipes where I can take advantage of the full versatility of it- this one is great for that!

ETA: well techinically I don't personally cut it down, b/c we live off leftovers through the week (makes awesome leftovers). But it could easily be cut back, just like Mary said.
