Cheese fondue!!!!!!

Alright I need some opinions:

I'm having my 2 favorite ladies come up in visit this weekend. Super pumped we're totally making cheese fondue.

We have the white wine, does anyone know what kind of cheese we should use? 

Or if you've made it before whats your recipe?

OH oH and I'm going to pick up a veggie platter, bread, and a couple apples. Any other dipping suggestions?

  • Sounds like fun!!!

    I would use Gruyere cheese (YUM!!!)...maybe mixed with something else? 

    I just looked it up on google and it looks like some sort of Swiss cheese is typically what they use with Gruyere...

    The only other dipping ideas I can think of would be veggies - maybe broccoli or something?  I may only be thinking that's a good idea because I'm trying to get more veggies in my diet...

  • I had a wine and fondue wedding shower and LOVED IT! MIL gave us a fondue fountain and the dipping kind too... So much fun! We LOVE FONDUE!!

    I don't remember what cheese recipe we used at the shower, but it was a big hit! Let me see if I can find it, but if not, there are a lot of good ones online. Have fun!

  • Gruyere cheese! That sounds familiar! Fantastic.

    Yeah I got a fondue pot as a wedding gift (although it's not a fountain one, which sounds epic!). When we made it for my B party the recipe had us add WAY too much wine. 

    But the chocolate one came out delicious.

  • I saw the subject of this post & got so excited. Have you ever heard of a restaurant called the Melting Pot? It's all fondue, and I worked in one for close to four years. I'm all about some cheese fondue, haha. What kind of pot are you working with?

    I could give you easy recipes for cheddar, swiss, spinach artichoke (yummy, but something everyone's had before), "fiesta cheese" (pretty much just queso), and Wisconsin trio (unfreakingbelievably good b/c it has bleu cheese).

    I could help you a lot with entree & dessert too if you're planning on doing more than just cheese. Yum! God, I miss my restaurant so much.

  • I used to live in southern CT and there was a Melting Pot about 20min away in Darien.....I miss it SO bad. That was me and Dave's date night place. I told him I want to go there for Valentines day, too bad it'd be a rather long drive now :(

    Normally working at a restaurant 6 nights a week for 4 years makes you not want to eat there, but I can't tell you how many times I spent my night off eating fondue at a table in the back with my friends.

    Ok, cheddar is super easy. Put 8 oz. beer (whatever you have works fine. We used to use PBR haha), 1/2 T. minced garlic, 1/2 t. dry mustard in the pot & let it heat up. Then you'll need about 8 oz. shredded cheddar, but the trick is to put the shredded cheese in a big ziploc bag & shake it with about a tablespoon of flour before you add it to the beer base. The flour keeps it from getting that kind of greasy film on the top of the pot if it sits for more than 10 minutes. Add the cheese about 1/3 at a time & make sure it's all mixed & melted before you anymore. Mixing with a regular fork is fine. Then add black pepper to taste (I pepper the hell out of everything.)

    Wisconsin Trio has a little more to it, but it's my favorite. The recipe calls for 6 oz. white wine & 2 oz. dry sherry, but you're fine to just use 8 oz. white wine. I actually like it better that way. Add about a teaspoon chopped shallots and let the base heat up in the pot. Once it's steaming, you can start adding your cheese mixture. It calls for 4 oz. fontina & 4 oz. butterkase cheese, but if those are hard to find, you can really use any smooth, mild white cheeses. You're gonna have to do the same thing with the flour & the ziploc bag, and adding it 1/3 at a time. Once all the cheese is melted together & smooth, add an ounce to two ounces of crumbled bleu cheese. Mix so it's incorpated, but not completely melted. Then you can top with with chopped scallions, but that's more or less just a garnish.

    It's super easy. I used to train new employees & everyone got the hang of it quick. Keep the pot on high while you're making it, then keep it on low the rest of the time it's out. As far as dippers, we had french bread, rosemary bread, pumpernickel bread, carrots, celery, cauliflower, and sliced granny smith apples.

    If you do dessert, there are a million different things to do as far as dark, white, or milk chocolate, adding peanut butter, caramel, marshmallow fluff, etc. The dippers we used were cheesecake, sliced bananas, sliced strawberries, mini brownies, little chunks of poundcake, little rice krispy treats, and big marshmallows. If you want to make super badass marshmallows, put some in a two ziploc bags with just enough water to get them all sticky & shake them up with graham cracker crumbs & oreo crumbs. Oreo marshmallows are SO freaking good.

    Gahhhhh I'm super jealous you're having a fondue party! Have fun!!!

  • I made this fondue and it was pretty good.

    And I cannot recommend pizza fondue enough.  Two cans of tomato sauce, a packet of the spaghetti sauce spices from McCormicks, and shredded mozzarella. Heat up the sauce and the spices, and then add the cheese until it's all melty.  Cut up a baguette and serve. Delicious.  (If you can't find the spaghetti sauce packet, I've used pizza sauce and added some italian seasoning.)

    And ead1975 - That sounds like an easy delicious idea! I'll have to try that one night soon with DH instead of us getting pizza.

  • Ok so we are having fondue tonight! haha. I couldn't recall what we did before, but I really want to do a swiss or gruyere too one of these days! Tonight, however, I am going to do this cheddar, garlic, and red wine number I found. I think it sounds good and I need to make a dent in the huge bag a garlic I recently bought at Sam's! haha. (I've discussed my Sam's trouble before...re: the big boxes of paper towels and TP that I don't have the space for! HA.) Plus I like to roast garlic, I think it is fun. I'm a dork. haha.

  • Okay I can't beat all the info Sara gave you, but we do have a fondue place called Simply Fondue in our town, and LOVE going there (I love it more than DH does, but too bad for him lol)

    Our favorite cheese has: Sharp cheddar, beer, basil pesto, garlic, and sun-dried tomatoes.


    Seriously....it's amazing! As for the dippers, it comes with 3 different breads (I forget exacty, but I think sourdough, whatever the dark dark brown bread is, and one with herbs that I don't care for.)
    Vegis were carrots, olives, bell peppers, broccoli..and more that I can't remember.
