Here is my revised baptism lunch menu.
How does this sound? There are no vegetarians or restricted diets in my guest list.
Pork tenderloin with jezebel sauce
Roasted veggies (sweet potatoes, carrots, asparagus and red potatoes) with olive oil and herbs
corn chowder
pasta salad
broccoli salad--this has bacon pieces, red onion, and a cider vinegar dressing. Everyone loves it.
Rolls with honey butter.
Strawberry bread with strawberry cream cheese frosting
mint brownies
tea, coffee, lemonade and probably hot chocolate and apple cider

I am loathe to say this, but may I confess that I liked the other menu better?
This seems like it's going in a different direction, something more formal, and I guess if you said your guests are driving a ways, than maybe you want to do that.
My specific thoughts:
It seems like there's lots more prep work for you - will you have time, particularly for the veggies?
Soup adds a whole other level of logistics, so now you have to have bowls and spoons in addition to plates and forks.
The strawberry bread seems very summery/4th of July to me, but maybe it's a year-round thing for yall. It also seems like a carb duplicate of the bread with sweet butter. Maybe lemon squares or pecan tassies if you want something not chocolate.
The apps we suggested aren't listed. Are they implied? I just know I'm always starving after church and have a very short time window before I go straight to witchy from hunger
This hot cider is divine and makes your house smell incredible.
I promise I'm not forever critical!

I will prep most everything the night before. I figure I can set the veggies to roast before I leave for church and they'll be ready when we get back. Or do you think they'll be dried out by then? My oven has a warm function with a temp of 120 degrees. Would this be enough to keep the veggies and meat warm? I think I've convinced my DH to smoke the pork tenderloin in his smoker.
Strawberry bread--my mom can't eat chocolate and I was looking for a nice dessert that she can eat. I know she loves my strawberry bread, but lemon squares sound amazing! I didn't think of those.
The soup is a crockpot version and I don't mind the bowls and spoons.
Apps: yes, I didn't mention those. I'm going to have some bowls of spiced pecans and a pineapple cheese ball with crackers out for guests to munch. It shouldn't take more than 10 minutes to get the food on the table. These guests aren't too high-maintenance and will likely be gabbing and outside smoking (ugh!) instead of being impatient.
I like the other menu better too honestly, but I was trying to think heartier since it is now friggin' cold! LOL!
What's the timeline for the baptism? For my son's people drove an hour, an hour Mass, 20 min break, then 30 min service. That would have been way too long for roasted veggies. If it's just going to a baptism and coming home you should be fine. I'd still consider swapping for a potato casserole and tossed salad.
Everything else sounds good, but I highly highly recommend more apps. Even if it's just a 30 min service people are going to be hungry and it WILL take more than 10 mins to get the meal out. You will need to take coats, use the bathroom, take pics maybe, get drinks, plate things up, there may be something with the baby, etc. Get a shrimp cocktail, some peanuts, and a cheese plate with some pepperoni. You can do all of this ahead so all you need to do is put the plates out, or assign your mom this task.
Maybe with foil on the veggies while you're gone to keep them from drying out, then remove it to brown them when you get home? I'm not sure.
Citrus is in season now, so you should be able to find great fresh lemons to make lemon squares with. Plus, they're really popular with a crowd.
I'm too lazy to get out bowls and spoons and plates and forks, so go you

And I do have to say I'm with 6 on it taking more than 10 mins

Also with the doing everytihng ahead-- the night before DS's baptism, I pulled EVERYTHING out-- crockpots, plates, napkins, serving spoons, because, as expected, we were held up, and I was able to send SIL's home to finish everything and they didn't have to dig through cupboards or anything. All they had to do was pull foil off the things in the fridge and turn a few things on. It was super easy.
