wtf am i going to do with this chicken?!

So I have 3 chicken breasts out (what a random number...). Can you give me an easy one dish dinner to throw together quickly? I'm thinking some sort of easy casserole. I can't go to the store, but I have cream of chicken soup, cheese, breadcrumbs, pasta sauce, pasta, rice...I always throw chicken with pasta when I don't know what to do with it so I would like to avoid that route but...any ideas??! :)

  • Cheesy chicken and rice? You could adapt this recipe or this recipe to what you have on hand. It would be fine with only 3 chicken breasts.

  • do you have any bacon? we love Chicken Schnitzel with Bacon & White Wine per pam's excellent suggestion, i dredge the chicken in breadcrumbs first. i'd also recommend pounding them out a bit so they are pretty thin.

  • cheeky that looks awesome and I'll definitely save that for another time! I don't have white wine in the house (although I wish I did!!) and it's a little too labor intensive when I'm home alone with Benjamin demanding most of my attention. ;) But that's definitely a meal we would love, so thanks for the suggestion!
