Veggie meal option

I need a vegetarian meal option. In March we are having a large conference and need to feed 150 people. Time is limited so we want to get people quickly through the lunch line as possible. We also serve people to control portions since we have discovered that people don?t eat for days prior to our conference and binge. Stick out tongue

We decided to do a chicken dish, red skins, veggies, plated salad and a roll.  I need a vegetarian entr?e. Something that can be prepared and served easily.  I want to stay away from pasta, since we did that last year. And, I?m afraid if we do a pasta, everyone is going to want pasta in addition to their chicken.

  • I'm not sure if this is something that can be prepared on a grand scale, but what about a veggie quesadilla (corn, black beans, onion, etc)?  It should be easy to whip up the ingredients, some cheese and melt it all between a tortilla shell.

  • I'll think about it.  The = for chicken as an entree is almost always pasta.  Eggplant parm or something similar.  Let you know if I think of adifferent idea.
