I need a vegetarian meal option. In March we are having a large conference and need to feed 150 people. Time is limited so we want to get people quickly through the lunch line as possible. We also serve people to control portions since we have discovered that people don?t eat for days prior to our conference and binge. ![]()
We decided to do a chicken dish, red skins, veggies, plated salad and a roll. I need a vegetarian entr?e. Something that can be prepared and served easily. I want to stay away from pasta, since we did that last year. And, I?m afraid if we do a pasta, everyone is going to want pasta in addition to their chicken.

Hmmm... I'm having a hard time thinking of a veggie option for a crowd that isn't pasta. Maybe quinoa or polenta topped with an herbed vegetable medley?

A "true" vegetarian does not eat fish, so definitely don't go that route.
I think the veggie stir-fry idea is great!
I'd go with the portabellas (great suggestion!). They'd interchange well with the rest of the menu too.
